It has milkshakes! We had to stop by and try them. Dana had a chocolate peanut butter. I had a coffee milkshake. They were decadent and flavorful! We heard Marko give a talk at the pasta feed on Saturday of the race weekend. We think the lessons he talked about are worth sharing and we do so from a bit of audio we captured at the luncheon. We discuss these lessons and what they mean to us in running and life as well. (Please forgive the audio. A fire alarm was going off for much of Marko’s speech. When we saw their menu, we couldn’t help but try their signature item, "The Grizzly Dog" for 10.00. They chop a reindeer sausage and smother it with sautéed onions, peppers and cheese sauce. Yum! There are other items on their menu that piqued our interest, so… of course we definitely want to get back to it when we are in Anchorage again. RUNWe ran a great Medal Chasers Virtual while we were staying at Coronado Springs Resort in Orlando at Walt Disney World. This week, we discuss completing Medal Chasers Maximum Effort 5K celebrating the anti-hero Deadpool. The medal was such a great design, as always! We love what Kristina and Bill do at Medal Chasers. We were so excited to do this race to support Shriners Hospital for Children, too.EATWe finally scored a reservation at Sebastian’s Bistro at Caribbean Beach Resort after trying for several weeks! We specifically wanted to try this place because they have a 3-course, family-style meal offering that is plant-based as well as a version for meat lovers, too! Reservations here are limited because they are only open for dinner. In addition, there are some days they are not open. We wish it was available all day, 7 days a week! So good!DRINKSebastian’s Bistro also had great drinks, both non-alcoholic specialty drinks and cocktails that are very tasty! Aimee had a Marooned Pig Old Fashioned… smoky bourbon and bacon goodness! Dana, who is currently completing the 75 Hard, had a Sebastian Island Paradise that made us wish we were on a beach sipping that frozen and refreshing beverage. The packet pickup was great, and the Expo had beautiful swag. The race had a safe and well-directed neighborhood path. The medal and post-race snacks were great. The best part, though? We did it with a member of the Runcation Nation no less, Tina! Congratulations to Tina for completing her first live and in-person 5K race. She crushed it, and we couldn’t be happier to say that we were lucky enough to be a part of it! Can’t wait to get back to this beautiful part of the country! Gatlinburg and Townsend are beautiful and full of places we want to explore in the future! EATWe ate a classic Steakhouse dinner to celebrate the accomplishment that was within walking distance of our hotel in Gatlinburg, The Peddler Steakhouse. It reminded me of some of the great places our families used to take us as kids on special occasions. We started with an appetizer of fried mushrooms and cauliflower with honey mustard. With a salad bar and tasty steak entrees that were too tempting to pass up, we got a Prime Rib and Ribeye to try with loaded baked potatoes. The shrimp, salmon, and chicken dishes looked like winners, too. DRINKWe toasted our accomplishment at Gatlinburg Brewing Company. These organizations work to support and show appreciation for many Truck Drivers across the United States. We ran our miles at the beautiful Laurel Falls Trail in Tennessee during Truck Driver Appreciation Week (September 12 - September 18). This week culminated in Rob’s birthday on the 18th. This was our first ever trail walk or hike. We saw so many beautiful sights that Rob would have loved and learned some important life lessons along the way. The Anchorage Mile events included a Women’s, Men’s, Military, and Community Mile that went off throughout the morning. We had a great time running the flat course that looped 1.5 times around a great park where an outdoor post-race event was held with tents set up with games for kids, a truck serving coffee, post-race pizza, and a hunting safety tips tent was set up. Then we got the honor and privilege to hear Bart Yasso and World Record Holder for Double Amputees in the Marathon. Marko Cheseto motivate us and provide us with wisdom ahead of the longer races on Sunday. Such great events to start the weekend off right! We will recap our 5K experience on next week’s episode, so stay tuned for more about this incredible weekend. It is our first back-to-live racing and traveling out of the state… can you tell we are excited?EATSimon and Seafort’s was our celebratory meal after all the running was done in Alaska. It was amazing. Pro tip: make a reservation! There are four beer stops on the course, which is enclosed inside Al Lopez Park in Tampa. It is always a great time with great people to meet and delicious local beers on the course. The medal? Your pint glass. Your shirt? Always a unique color, this year a light blue. This race never disappoints.This run has supported many worthwhile causes, and this year is no exception. Tampa Bay Humane Society was the charity, and the volunteers who were at the beer stops were so eager to appreciate runners and talk about their organization with fellow dog lovers on the course. EATThe Tampa Beer Run not only had post-run beer for sale through the Beer-Bu-Lance but had a great local food truck with flavorful BBQ we could smell cooking while we were still on the course running! Sue-Pig BBQ LLC was there to satisfy our BBQ craving, and it was everything we wanted and more. Dana had to try the BBQ because Aimee was still on the #75Hard. Aimee got to have the vegan offering from the truck: French Fries. Both were glorious! We met up with one of our patrons, John Schroeder, and had brunch there. Steak Frites, a Breakfast Cuban, Charcuterie, and Lemon Ricotta Pancakes… there is something for everyone from sweet to savory! We had leftovers fit for a king, but we had to sample multiple items, and they were all full of mouthwatering goodness you have to try! We can’t wait to get back to this place again. Their staff is so friendly and helpful. The atmosphere is rustic and authentic. The Boozy Pig is a winner if you are visiting the Tampa area. DRINKThe Boozy Pig has a fantastic Cafe Con Leche. This week, we discuss completing Medal Chasers Daywalker Blade 5K celebrating the character Blade from the movies of the same name. The medal was such a great design, as always! We love what Kristina and Bill do at Medal Chasers. We were so excited to do this race to support Shriners Hospital for Children, too.EATThis week we highlight a plant-based breakfast option on the Walt Disney World property. We had the opportunity to go to Ale & Compass at the Yacht Club Resort. The theming in the restaurant and the resort is nautical and so relaxing. This plant-based option was a huge breakfast entree and very flavorful. We breakdown each part of the dish that we both had and thoroughly enjoyed while staying on our 75 Hard program. DRINKFlashing back to Ale & Compass inspired us to create recipes for breakfast and brunch mocktails. We found a website, www.mixthatdrink.com, and took inspiration from a recipe for the Bella Bellini there but tweaked the recipe to suit our palates. From there, we were inspired to create faux-mosas, too. Now we just need to recreate the amazing meal from Ale & Compass to go with them all! Here are our recipes below. Perfect timing for this race series to get kicked off because we met up with Bill and Kristina from Medal Chasers.EATWhile in Orlando, we met up with Pam and Ariel from Pure Creative Apparel. They introduced us to an amazing place focused on tasty comfort food that is all vegan! It’s Ethos Vegan Kitchen located in Winter Park, Florida. It is just outside Orlando, where Aimee lived when she went to the University of Central Florida in her college days! They serve breakfast, lunch, and dinner seven days a week. We had amazingly tasty breakfast options. We break down their breakfast burrito, their pancakes, and even a bonus that is not breakfast - the garlic knots! We can’t wait to go back and have other tasty dishes!DRINKFor the beverage portion of our show, we return home and visit The Apothecary located inside Millennial Brewing in Fort Myers. Why? Because on the 75 Hard Challenge, we are, of course, not having alcohol. This means we need to get creative with our beverages to be a bit indulgent but still be good to ourselves while we refrain from alcohol. We had their hard root beer in a cocktail special, a Hard Root Beer Float. It was beautiful scenery, great company, and a terrific feeling to accomplish the goal.EATWe bring you plant-based offerings from Sanaa at Animal Kingdom Lodge. We took a tour of their appetizer menu, and it is was rich with flavorful offerings that kept us on our plan. Yes, a salad might have been a favorite, but you have to hear the discussion about it! Sanaa has a plant-based entree that we did not get to but want to try on a return visit, but we had an amazing dessert. Bottom line: You could have a complete three-course meal that is plant-based here and walk away so satisfied! DRINKSanaa also had a drink option for us to celebrate National Mojito Day and stay on our plan, too! They have an entire “mocktail” menu, but we had to go with the Sparkling No-jito in honor of the day! It was tart with a hint of mint and a slight sweetness. It is a perfect alternative for a designated driver or those who do not want to drink but still want to feel like they are on vacation or celebrating a special occasion! Many of you came along as it was the culmination of Dana’s Couch to 5K program. This race benefits the Moffitt Cancer Center in Tampa and according to www.richardsrunforlife.org, “The money is earmarked for Moffitt. According to the American Cancer Society, one man out of six will be diagnosed with prostate cancer, and one of 35 will die every year. Prostate cancer is the second-leading cause of cancer deaths in American men, second only to lung cancer.”. The money raised this year is totaled at $110,000. We can’t thank Michael Kilgore from the Columbia Restaurant Group for helping us register and participate in this fantastic event. While the weather was humid, the course was beautiful, people were so friendly, and the post-race celebration outside Ulele was great. There is another race hosted by this fabulous restaurant group called Richard’s Run. It is a nighttime race returning in the first week of November 2021. Go for the awesome food from this restaurant group, too!EATWe bring you vegan offerings from Taco Dirty. Dana had nachos and Aimee had a bowl. There are so many eclectic and tasty choices! We break them down on the episode from protein options, bases, sauces, and more! DRINKTaco Dirty also has a variety of unique non-alcoholic beverages. Peach Bellini Tea unsweetened and one we’ve never heard of before, Pineapple Celery Mint beverage. Aimee liked the combination of the Pineapple and Celery surprisingly! This race benefits the local YMCA. There was physical distancing at the start, a warm-up with local fitness instructors, and a scenic 1-mile route that passes some popular local restaurants and historic landmarks. It was a beautiful and fun race. While there was not a medal, there were cheering crowds of people dining outdoors and beautiful scenery by the water against the backdrop of a great Friday night Florida sunset.EATWandering Roots is a Vegan Food Stand that has been popping up at local breweries and farmers’ markets. We decided to check them out when they posted about a Philly made completely Vegan with local mushrooms from Stropharia Mushroom Farm. They also had a tasty Vegan gyro. Their offerings are flavorful and robust. We definitely want to check out more of their menu! DRINKAnkrolab Brewing Company is a place in Naples that we have been meaning to check out for quite some time. We finally made it down. Their indoor and outdoor seating is plentiful and comfortable. The bartenders are friendly and knowledgeable. They have a taco place right next door and food trucks on-site most nights. We each had a flight to check out the variety on their menu at Ankrolab Brewing Company. There were several styles full of flavor. We took a growler of one of our favorites home. Can’t wait to get back and have more of their menu. Episode 159: A Live TRAIL Run?
Send us a textRUN It’s our first trail run! Okay, a portion of this 5k was on a trail at our local Calusa Nature Center and Planetarium. We were excited to participate in a local and live 5K. The inaugural Run for the Youth 5K to benefit the Sheriff's Youth Activity League was held last Saturday and raised around $7000 to support youth programs. The race kicked off at 7:30AM with a member of the Runcation Nation, Jessica, singing the National Anthem beautifully. Then we were off on a paved road that led to a well-marked trail on the closed course at the Calusa Nature Center and Planetarium. Aimee was still walking, but we finished with the help of members of the Runcation Nation cheering us on through Instagram and on the course, too! EAT“bullig” Coffee & Bites is a local breakfast spot a hop, skip, and jump away from our race finish in Fort Myers. We got it on good authority - from an American Ninja Warrior, Morgan “the Moose” Wright- that this was the place to check out. We got two huge breakfast sandwiches, one with house-made hollandaise and one with house-made pimento cheese, both on house-made waffles… so savory and flavorful. You know a place is legit when hollandaise comes in a separate cup that looks it is meant for a small coffee.DRINK“bullig” Coffee & Bites is also known for its beverages. Aimee got the Herschel, which is a cocoa latte with pecans, caramel, and marshmallows on top. Dana got the Dirty Bee, an Espresso Chai Inspired Latte with Honey. All we can say is… these drinks could be meals all by themselves. Episode 158: Aimee Did It, LIVE!
Send us a textRUN This week we recap our first live race of 2021! It’s also Aimee’s first race back since the knee surgery. The Cape Coral Animal Shelter’s Rescue Run was a 5K to benefit our hometown’s first and only rescue facility for animals. The weather was beautiful. There was a great “runners village” during the pre-race with coffee, breakfast, and more! With no pace requirements, it was the perfect race to pet dogs and follow the advice of our Physical Therapist, which was to walk the entire distance. We finished last. It was a great morning to start a comeback and support a fantastic organization. And, puppies!EATWe first met AJ & Christina Bordelon when we covered the Viet Yum Food Truck on Episode 104 at Fort Myers Brewing Company’s 7th Anniversary. They were so nice and the Bahn Mi Rice Bowl was so tasty at that event. Fast forward to a year later. They are still going strong! They reached out to us and said, hey, come try our new dish. It is called Saigon Wusubi. Their description on the instagram post that introduced it says it all, “Our little take on Spam Musubi! Fried spam caramelized in our Saigon Sauce wrapped with Jasmine rice, toasted black sesame seeds, green onions and nori seaweed, drizzled with our spicy mayo mix. We ate brunch there and it did not disappoint! The restaurant was a flurry of activity when we arrived with karaoke in full swing. They do take reservations, which we would strongly advise, but there happened to be an opening right away, so we took it! The bar was stocked with local and well-known brews plus bottomless mimosas and bloody marys for $20 to go with the meal. We started with the jalapeño and sausage corn muffins. They were tender and flaky with a breakfast sausage flavor and just a hint of spice. Dana had “The Hangover” breakfast sandwich and it was full of breakfast meats, eggs, and cheese on a soft brioche bun. Aimee had the “Short Rib Hash,” which was one of several hash dishes that looked mouth-watering as they came out of the kitchen. The Standard does not skimp on the tender meat in the hash, the potatoes were seasoned perfectly and the over-easy eggs had a perfect runny yolk a-top this perfect-sized skillet. If you come to the Fort Myers area, check out The Standard for the entertainment and the tasty dishes. We can’t wait to go back and try their regular menu, too! DRINK This week, we got the chance to attend a Coffee Connoisseur Tasting and Certification at the Luminary Hotel in Fort Myers. Ulli Winckler is the master roaster for Dean St. Coffee Roastery at the Luminary Hotel and preseident of Rebel Coffee in Cape Coral. We got a special behind the scenes look at what it takes to roast coffee and tasted 12 different varieties of coffee. We break down what we learned this week. But not just any soup. It is a vegetarian version of a soup we are so fond of at The Columbia Restaurant. The Spanish Bean Soup is one we had on the first episode of our show. Theirs is delightful with Chorizo, Onion, Chickpeas, and warm spices.We used our instant pot to create this version. It makes approximately 8 servings.Here is our recipe:Ingredients:White Potatoes Diced - 6 potatoesWater - 8 CupsDry Garbanzo Beans - 1-lb PackageWhite Onion Diced - 1 whole onionDiced Carrots - 4 wholeDiced Celery - 4 stalksDiced Jalapeño - 1 WholeMinced Garlic - 6 ClovesSmoked Paprika - 2 TablespoonsLiquid Aminos - 4 TablespoonsChopped Fresh Kale - Half of a 16-ounce bagDirections:Combine all ingredients except kale in the instant pot. Set the instant pot on high and cook for one hour. Release valve and depressurize instant pot. Add kale. Turn back on low for 20 minutes. Then divide equally among 8 bowls and enjoy. Or divide among containers to store for the week for lunch or dinner. DRINK Monday, February 22nd, was National Margarita Day. So, we share our own Pineapple Jalapeños Margarita recipe to honor this day! Ingredients (Serves 2)Silver Tequila - 2 ounces Cointreau - 1 ouncePineapple Juice - 2 ounces Lime Juice - 1 ounceSliced Fresh Jalapeños - 4 (2 are for muddling and 2 are for garnish)Sliced Lime Wedges - 2 for garnish Jalapeño Simple Syrup (1 cup sugar, 1 cup water, 1 additional jalapeño halved from those listed above)DirectionsMake Jalapeño Simple Syrup prior to mixing drink by bringing 1 cup sugar and 1 cup water to a boil on high heat. Remove from heat and add jalapeño. Allow to steep in mixture for a few minutes before preparing remainder of ingredients.Combine all the rest of the ingredients in a shaker with ice and 1 ounce of the Jalapeño Simple Syrup. Episode 152: Dana Does an Iron Man

He earned a medal from the Medal Chasers Assemble Series, “Part of the Journey is the End.” The medal features Iron Man and lights up! It is so cool. And as fans of Tony Stark, the title of the virtual…so appropriate. Even better, the featured charity is one we have talked about before, the Pinky Swear Foundation. According to their website, "Pinky Swear Foundation eases the financial and emotional impacts experienced by children with cancer and their families by providing basic needs support during a very challenging time.” It is an amazing mission and we are so happy to feature this foundation through this virtual event provided by Medal Chasers.We thought highlighting this race was also very timely, as we also have an entire team of the Runcation Nation running to support The Donna Foundation through the Donna Marathon Weekend virtual events. Episode 149: The Challenge Continues 10K, Vegetarian Chili Recipe, and Destihl Normal Pils

The Challenge Continues 10K from our friends, is a virtual race supporting the Colorectal Cancer Alliance. We discuss his run, the featured charity, and the bling he earned as well as an update to Aimee’s progress.EATWe continue to share healthy meals and snacks with you this week. We are getting 2021 off to a great start with some of our favorites. This week’s dish is one that can be a lunch or dinner vegetarian or vegan option. It is also a good option to warm your soul at this chilly time of year, no pun intended.Meatless Chili (With Amazon Affiliate Links to Ingredients): 1 Pound (16oz) of Dried Red Kidney Beans 2 Cans (10oz) No Salt Added RoTel2 Cans (10oz) Fire Roasted Diced Tomatoes and Green Chilies 1 Medium Onion Diced4 Tablespoons Cumin2 Tablespoons Onion Powder4 Tablespoons Chili Powder1 Cup Bulgar Wheat 2 Tablespoons Liquid Aminos Directions:Add kidney beans, RoTel, Onion, Cumin, Onion Powder, and Chili Powder to Instant Pot. Set to pressure cook for 1 hour on high. After pressure valve releases, add Bulgar Wheat. Then, pressure cook another 20 minutes. After cooking is completed and. Instant Pot is depressurized, stir in Liquid Aminos.Serving Suggestion: Serve in a bowl with raw, chopped onion, chopped jalapeño and a dash of hot sauce or limeDRINK We got suggestions for our show in the coming year and one was the desire to see food and beer pairings. So what goes with our vegetarian chili? A website where we have found some delicious and healthy recipes for many years, Cooking Light, recommends a Pilsner. This week we try a beer from Destihl called Normal Pils. It is a bready beer with a 5% ABV. Sweet malt and earthy hops are at play to cool our palate after our spicy take on vegetarian recipe this week. Episode 148: Resources to Keep Going Toward Goals

Running groups, whether you get virtual support or in-person encouragement can be a key part of pushing forward, especially in challenging times. There are several running groups on Facebook that we belong to and gain so much from. The online community is so strong. The Cape Coral Running Group is following all the safety guidelines to be able to meet in person. Their runs are most times on Sunday mornings and they welcome anyone at any fitness level, even walkers like Aimee will be when she starts back to her run-walk-run. We wanted to feature a member of the group and share her journey to provide inspiration, support, and encouragement for anyone in the Runcation Nation that is thinking about trying to join one but may be hesitant to do so. Jennifer Wagner was kind enough to talk to us about her running journey and how the group supports her. Maybe her experience will encourage you, when you can safely of course, to explore your local running groups and give them a try. EATWe got requests for great snacks that we eat on a regular basis when we are training or just need something great, healthy, and filling. Our go-to: hummus. This week we talk about the recipe and all the different ways we incorporate hummus into our diet. Chickpea Hummus Ingredients:1 Pound (16oz) of Dried Chickpeas 1/2 Cup fo Tahini2 Tablespoons of Cumin8 Garlic ClovesJuice of 3 LemonsDirections:We cooked the chickpeas in the instant pot, covering them with water for an hour and let them cool for an hour after. Then we drained them and combined them in the blender with the other ingredients. Blend well to the desired consistency. Store in sealed refrigerator-safe container for the week. Serving Suggestions: Crudités Platter Hummus Toast (We top with walnuts and sriracha)Stuffed MushroomsDRINK This week we try a drink that is a bit out of the ordinary. The Green Juice Martini was featured on Guy’s Ranch Kitchen. This drink is full of green veggies like cucumber, kale, and celery plus green apples and lemon juice. RED Episode 142: Elite Events Thanksgiving Day 5K and Casa Santo Stefano in Tampa
Send us a textRUNWe are recapping this year’s experience at the Elite Events Turkey Trot that we ran live on Thanksgiving last Thursday! The medal was bigger, but the experience reminded us of last year while the folks from Elite Events made sure everyone was comfortable and had plenty of space to socially distance. The post-race treats were great and the opportunity for photos was so nice. Elite Events has race results posted online and finisher videos, too!We also completed a virtual race - Richard’s Run for Life. It is a 5K to raise funds for the Moffitt Cancer Center. Aimee and Dana did their races in different ways and we recap that this week. The end result was the same: supporting a great organization and getting a $25 gift card to use at Ulele or the Columbia Restaurant. Yum!EATThe Columbia Restaurant Group opened its newest restaurant two weeks ago in Tampa, Casa Santo Stefano! We got to see their beautiful new space just down the street from their Columbia Restaurant location in Ybor City. This one took over an old pasta factory and pays homage to Sicilian classics on their menu. We started with Arancini, sampled an amazing salad in Valenti’s Burrata, had a classic in Spaghetti Con Pulpette (Spaghetti with Meatballs), and a unique dish in Spaghetti Al Nero Con Polpo (Squid Ink Spaghetti with Octopus). Delightful and delicious, the meal was a wonderful way to celebrate Aimee’s birthday!DRINK Casa Santo Stefano also has great cocktail selections. We wanted to try wine from their beautiful upstairs wine cellar. It was so hard to choose. Our server, Val, steered us in the right direction. We will be back for wine but focused on cocktails. The Casa Negroni made with Sicilian gin, highlighted the floral notes of the gin. The 1925 Manhattan, named for the year the building opened, was just the right amount of sweetness and smoke. Just some wonderful notes on their amazing customer service: Val checked in with us at the perfect time during each course of the meal and he was ready to make the recommendations we needed for a perfect meal. The entire staff signed a card for us and presented us with a great lemon pound cake dessert to help celebrate the occasion. We felt like family. Matteo, a manager at the restaurant, gave us a tour of the building after our meal. We saw the kitchens and dessert stations where the magic happens. RED Episode #140: Army Ten-Miler, MREs, and Black Rifle Coffee
Send us a textRUNThe Army Ten-Miler Virtual Race is one we saved for this week as we celebrate Veterans Day, which was on November 11th. We are well past the deadline to submit times but wanted to run this one to honor those we know and those of you in the Runcation Nation who served or have family members who served. We break down the swag bag, medal, and run on this week’s episode.EATMREs (Meals Ready-to-Eat) Genuine U.S. Military Surplus are on the menu this week. We’ve never had them. How are these meals? Worthy of our soldiers? We tried two varieties and recorded our live reactions this week! The first was chicken, noodles, and vegetables in sauce. The second was a beef brisket entree. We talk about these MREs as items to consider when we are hit with a natural disaster, much like we have a hurricane kit with some canned goods in case we need them. These MREs have a longer shelf-life than some canned goods do, so they may be options that are worthy of consideration, although it may take some time to find a variety suitable to your palate. DRINK Black Rifle Coffee has a reputation for making great coffee and supporting our veterans. This week we share with you another variety that is available in our hometown.
