Clearing the Confusion around Saturated Fat, Cholesterol, Paleo, and Keto | Dr Michelle McMacken
In Episode #37, I sat down for the second time with Dr Michelle McMacken (previous guest on Episode #2) to talk about the science behind eating for longevity. This is one of my favourite episodes so far in terms of breaking down the science, clearing the confusion, and helping us all understand what we should be eating more and less of. Grab a pen and paper…you’re going to want to take notes and probably listen more than once!
We talked about Michelle’s project, which offers plant-based food programmes to outpatients with chronic diseases, and the science behind saturated fat and cholesterol and their contributions to disease. Michelle explained the specific types of fat and cholesterol we need to worry about, sources of healthy fats, and the science of the paleo and keto diets. Taking Control of Your Life | Rich Roll
In Episode #35, I sat down with plant-based dad, author, endurance athlete, and podcast host Rich Roll. We went through his journey from an unhealthy man in his 20s and 30s battling with addiction and poor food choices to a man in his 50s thriving physically and mentally while living a life of purpose and fulfilment.
Rich’s story is very well documented, but given that this is his first time on The Proof podcast and that we plan to record future episodes together, I thought it was important that those who may not know his story get a chance to hear it. Even if you already know his story, I think you will still benefit greatly by listening to this episode – I know I certainly have! We also talked about Rich’s transition to a plant-based lifestyle and what inspired it, his leap into the world of ultra-endurance competitive racing, the typical foods that Rich eats in a day, his thoughts on climate change, and much more. Connecting with Nature | Raw-Food Expert Ben Richards
In Episode #34, I caught up with Ben Richards, owner of Seeds of Life Cafe in Ubud, Bali, to chat about his story and what raw or ‘living’ foods are all about. It’s a three-hour episode, so a bit of a marathon one, but it’s full of golden nuggets to get you thinking about life at a deeper level, particularly why we eat what we do.

Inventive Cooking | Chef Gaz Oakley
In Episode #32, I sat down with world-renowned vegan chef Gaz Oakley to discuss his story and rise to stardom over the past three years. Since early 2016, Gaz has taken social media by storm with his avant-garde cooking displays on YouTube and Instagram, amassing a combined following of over 700,000 people.
Gaz has phenomenal talent, a bright future ahead, and is as humble and genuine as they come. In our conversation, Gaz took me through his journey so far, including how he developed a passion for cooking, where he crafted his skills, and why he took a hiatus from the cooking industry at one stage to work in labour and sales. Of course, we cover his transition to a plant-based diet and what inspired that, as well as how he comes up with the inspiration for his recipes. From Sick and Tired to Thriving | Loni Jane
In Episode #31 of The Proof podcast, I sat down with Loni Jane. Loni started sharing her journey pretty much as soon as Instagram was launched. She’s a great example of someone in very poor health who adopted a plant-based lifestyle and was able to turn her life around, both mentally and physically, to create a life of love, prosperity, growth, and wellness. Loni has now built a life that is in her control and on her terms, in stark contrast to her former life where she battled with excessive drinking, low self-awareness, poor nutrition, and essentially a depleted physical body.

Nutritional and Medicinal Properties of Mushrooms | Julian Mitchell

Food Innovation That Can Save the world | Thomas King
In Episode #22, I spoke with Thomas King, CEO and founder of Food Frontier, about cellular and plant-based meat alternatives and how they can save the world. Only 22 years old, Thomas is still one of the most impressive humans I have come across. At age 13, he set up the world’s most-visited website on unsustainable palm oil and the industry’s detrimental effects on the environment. In 2015, Thomas received the Young Australian of the Year award for his work as an environmental activist. Most recently, Thomas has become passionate about alternative meat solutions to help reduce the effect of our current food system on animals and the environment.
In this episode, we discussed how Thomas’s passion for our environment developed and his role as an activist, as well as the current food system, its effects on our environment, and alternative meat solutions. A Year-Long Vow of Silence | James Aspey
In Episode #21, I spoke with animal activist James Aspey on the horrors of factory farming and why he gave up meat. An Australian animal activist and vegan, James incredibly took a year-long vow of silence to raise awareness of the animal cruelty that takes place within our food system. He has since become one of the world’s best-known animal activists, having given over 500 free speeches across the globe. James lives and breathes this and is well equipped to explain the scale of the issue of animal-product consumption.
In this episode, we talked about James’s childhood and his health journey, particularly a pivotal time of his life that led him to become more health conscious. He shares more about that year-long vow of silence, what that was like, and how he makes money to be able to dedicate his entire life to activism. We talked about the factory farms and what goes on there and what resources you can check out to educate yourself further. Mental Illness and Addiction | Osher Günsberg
In Episode #20, Australian celebrity TV host (and vegan) Osher Günsberg (who formerly went by Andy G or Andrew G) shares his story and, in particular, his battle with mental illness and addiction. With his gift of the gab and contagious smile, it would seem Osher was always destined to entertain, but just how did a kid with anxiety end up hosting live TV in front of millions of viewers? What toll did that take on his mental and physical health? And what learnings does he have to share from that experience?
That’s exactly what this episode is all about – Osher came over to my place in Bondi and we had a really open and honest conversation about what he went through behind the scenes, from the terrible lows to the positive learnings and life-changing experiences. He shared how he has learned to deal with mental illness and alcohol addiction, his battle with weight, why he went plant-based, and how he ended up on the cover of Men’s Health. Nutrition Science | Frank Cusimano

Empowering Women and Creating Eco-Friendly Businesses | Zanna Van Dijk

Building a Healthy Gut | Dr Will Bulsiewicz
In Episode #17, I chatted to the gut health MD Dr William Bulsiewicz about how to cultivate a healthy gut microbiome and what this actually means. Dr B, as he prefers to be called, has a fun and agenda-free way of bringing the latest in gut health science to his clinical practice, website, and social media (@theguthealthmd) for us all to benefit from. Dr B’s résumé speaks for itself: he’s a qualified MD, board-certified in internal medicine and gastroenterology, a Master of Science in Clinical Investigation, and was chief gastroenterology fellow at UNC. He has also published more than twenty scientific articles and given more than forty presentations at national meetings. On top of this, Dr B continues to practice clinically.
In this episode, we discussed what the microbiome is and how it can be disrupted, what pre- and probiotics are and what role they play, and how to cultivate a healthy microbiome on a plant-based diet. Running for the Animals | Marathon Runner Fiona Oakes
In Episode #16, I spoke to Fiona Oakes about her path to becoming a marathon runner with three world records despite losing her kneecap (patella) to an illness when she was 17. For me, the really fascinating thing about Fiona’s story is that, despite growing up in a nonvegetarian family, she chose to eat a vegetarian diet at 3 years old and a completely plant-based diet by age 6 due to her love for all animals. After finishing school and working in an office job in London, she eventually started up an animal sanctuary in Essex that still exists today and provides a loving home to over 400 animals.
Fiona is passionate about raising awareness of animal cruelty and showing the world that veganism is both a compassionate and a healthy way to live that can fuel amazing athletic performance. In this episode, we covered Fiona’s conscious decision not to eat animal products at such an early age and how she was ‘different’ to many of her peers growing up. We also discussed her early career in London, how the animal sanctuary came to life, and her typical routine at the sanctuary. You’ll also find out about her marathon training and diet. Choosing Compassion | Chef Derek Sarno
In Episode #15 of The Proof podcast, I spoke with vegan Derek Sarno about his journey to choosing a life of compassion. Derek Sarno is one of the world’s best-known vegan chefs. One half of the Wicked Healthy team, Derek heads up plant-based product innovation for British grocery giant Tesco. While visiting London, I caught up with Derek and saw firsthand how much love and energy he puts into the food that he creates – just take one look at his Instagram and you will see what I mean! This guy is seriously creative, seriously compassionate, and seriously switched on when it comes to changing the landscape of healthy grocery food.

What’s on your plate? | Matt Cama
In Episode #14, I talked with Matt Cama, an animal activist and weight loss coach from Australia, to ask him to shed some light on what’s happening in factory farms. The cool thing about Matt is that he’s not your typical old-school animal activist – he doesn’t approach things with anger or aggression. His motto is ‘compassion above all else’, and he uses this approach to effectively communicate his message to people from all walks of life, including those with different opinions and belief systems.
In this episode, we chatted about Matt’s upbringing, why he was inspired to change to a plant-based diet and become an animal activist, and how he effectively communicates his message. A No-Waste Life | Vegan Chef Max La Manna
In Episode #13 of The Proof podcast, Max La Manna shares his story of how to live a no-waste life. Max is the perfect example of a typical American kid who grew up in the 80s and 90s thinking that an Italian American diet, full of meat and cheese, was normal and healthy. Despite having always been slightly more environmentally conscious than his peers, which he credits to the way he was raised, there was a pivotal moment in Max’s life where this consciousness was raised to a new level. To an extent, this moment redefined who he was and helped him work out his true purpose. Today, Max is a passionate vegan, an advocate for living a no-waste life, and an all-round great guy.

Building a Positive Mindset | Ben Handsaker
In Episode #12 I sat down with Ben Handsaker (better known as Abstacker), an Australian champion fitness model, cover model, international motivational speaker, and top performing coach. At the 2014 Musclemania Australian championship, Ben won first place in men’s physique and first place overall. He has since landed four covers in large global fitness magazines and has appeared in fifty fitness magazines around the world.
Despite all this success, Ben’s journey has not been without insecurity, failure, and adversity. Ben was once an overweight party boy who had little regard for his health and wellness. In this episode, learn how Ben was able to turn his life around. We also discussed his morning rituals, how he maintains a positive mindset and handles stress, and his top tips for weight loss and building rock hard abs. Ben is hands down the most motivational and inspiring guy I’ve met, and I recommend this episode for anyone wanting to improve their mindset, become a more positive person, and get better results in the gym.

Former Australian Rules Football Player Jobe Watson
In Episode #6, I spoke with Australian rules football champion Jobe Watson. Jobe captained Essendon Football Club for six years and won the Australian Football League (AFL) Best Captain award in 2012. Jobe’s career certainly had its highs and lows, and the most notable of those lows was no doubt the doping scandal he found himself in the middle of in 2016.
In this podcast, Jobe opens up about his introduction to football, his early days at the Essendon Football Club as a youngster trying to forge his own path, the doping scandal, and the toll the entire saga took on himself, his family, and his teammates. Jobe is an incredibly down-to-earth and humble guy who speaks from the heart. He shares with us how he overcame what can only be described as an earth-shattering experience to come out the other side stronger, more motivated, and with a greater perspective on life.

Plant-Based Food in New York City | Chef Peter Cervoni
In Episode #5 of The Proof podcast, I spoke with Peter Cervoni: a veteran of the food service industry with well over thirty years of proven, professional culinary experience in plant-based, health-supportive cuisine. Peter graduated from the Culinary Institute of America in 1993 and worked at some of New York City’s finest restaurants, including The River Café and La Côte Basque. Since switching to plant-based, he has worked as a chef for top plant-based restaurants in New York City, a food writer for Vegetarian Times, a food stylist, a culinary educator, and a restaurant consultant.
