Ep 63 Ellen's Healthy Favourites
This episode is a follow-up interview with Ellen Bayens of The Celiac Scene on our favourite foods. Episode 45 looked at many of our favourite foods, but in retrospect, most of the foods mentioned weren’t particularly healthy. We thought it would be best to level out the options with a chat on our favourite healthy gluten free foods. Ellen sent me the links to the recipes she chatted about, all are gluten free and some also fit into a low carb high protein diet – https://jenniferbanz.com/90-second-microwave-bread https://www.dietdoctor.com/recipes/keto-asian-cabbage-stir-fry https://alldayidreamaboutfood.com/new-york-style-keto-cheesecake/ https://kirbiecravings.com/keto-low-carb-microwave-cheesecake/ Here’s the recipe for the low-calorie gluten free english muffins I spoke about – ¼ cup oat flour (make sure it’s labelled as gluten free) ½ tsp baking powder Pinch of salt Blend together and add – 1 egg 2 Tbsp unsweetened applesauce OR plain Greek yogurt Stir till well blended. Spray or grease a cereal bowl or ramekin and spoon half of the mixture in, cover with plastic wrap and microwave on high for 1 ½ - 2 minutes. Makes 2 muffins. Ep 61 Taxes & Celiac Disease in Canada
This episode looks at how, in Canada, a celiac can make a claim on their taxes for the extra expense of gluten free food. The subject sounds simple enough, but as we find out, the Canada Revenue Agency has made the process laborious with very little positive effect on your tax return. For a professional perspective, I speak with my daughter, Deanna, who is an accountant and has worked with taxes for years. Ep 57 New Food Guide with Selena De Vries
This episode is a look at the new Canada’s Food Guide with Registered Dietitian Selena De Vries. The new food guide is a dramatic change from the recommendations we have known for years. We have always been told to eat so many servings from different food groups. The new guide takes a different approach and Selena does a great job breaking that down for us. Selena was a past guest on Episode 14 of the podcast discussing the challenges of losing weight and maintaining a healthy weight on a strict gluten free diet. Selena has written about the new food guide on her website at – http://www.healthbean.ca/the-canadian-food-guide-and-celiac-disease/ Selena can be found online at – www.healthbean.ca on Facebook at Healthbean Nutrition and on Instagram at celiac_dietitian Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Facebook - @acanadianceliacpodcast Twitter – CeliacPodcastCA Email – [email protected] Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL (search Sues Gluten Free Baking) Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 56 Melissa Secord of the CCA
The podcast is celebrating one year of episodes!! Melissa Secord, Executive Director of the Canadian Celiac Association was the first guest on the first episode and since the CCA has so much on the go, I thought I’d check back with Melissa one year on. Melissa mentioned the campaign to fund peer counselling services at the CCA offices for people who call in needing assistance. A funding page has been set up, so supporters of the CCA can become Peer Support Champions. It may or may not be difficult to remember back to realizing you needed to eat gluten free, but we all remember how tricky it was. You can become a Peer Support Champion with a single donation, or with monthly support. Go to http://bit.ly/CCAPeerSupportChampion. Otherwise you can find more information under the donate button on the CCA website at www.celiac.ca. This week I spoke with Jessica Danford whose online presence as GFREEWIFEY is well known, at least amongst those from the Toronto area. Over this past year, she has begun a program to donate gluten free food to public food banks. This may sound simple, but it involves education of both management and volunteers at each food bank as well as mounting campaigns to have safe gluten free food donated to the food banks willing to handle it. Ep 44 5 Things Everyone Should Know About the Gluten Free Diet
This week was a bit different – I spoke about a video I felt compelled to make about the 5 Things Everyone Should Know About the Gluten Free Diet. Here’s the link – http://bit.ly/5ThingsAboutGlutenFree I was quizzed so many times while I had the bakery about the diet and questions surrounding those on it, I felt that maybe a video might answer those top 5 questions as follows: Who needs to eat a gluten free diet? How much gluten is too much? – A tiny bit of gluten makes a huge difference. What happens when someone who shouldn’t eat gluten eats some? How can anyone be sure they’re eating gluten free? How can I prepare a meal for someone eating gluten free? The Canadian Celiac Association funds research into celiac disease through the Dr. J.A. Campbell Research Fund. This week I speak to Melissa Secord about the process of awarding grants as well as speaking with one recent recipient. James King is working on research to look at the many studies that have been done worldwide on the prevalence of celiac disease. His work will amalgamate the data to look at the diagnosis of celiac disease worldwide and what can be learned from the results. Further, James is studying a large group of celiacs in Alberta to identify the impact of diagnosis on the healthcare system both currently and in the future. You can find out more about the Dr. J.A. Ep 35 Growing Up Gluten Free
My daughter, Deanna was diagnosed with Celiac disease just before her fifth birthday. She is now in her mid-twenties and seemingly well adjusted to the gluten free lifestyle. My interview is an attempt to look at growing up gluten free as a retrospective on how she viewed her life differently because of celiac disease and the gluten free diet. Portions of her story appeared in cookbooks by Donna Washburn and Heather Butt who appeared on Episode 8. I quickly pulled two of the cookbooks and found Deanna on Page 14 of “125 Gluten-Free Recipes” and on page 66 of “The Best Gluten-Free Family Cookbook”. Donna and Heather’s cookbooks are published by Robert Rose and are available where most books are purchased. Ep 34 GF Apps as Tools
This episode is a more like a tech review. I look at three different apps that can be used to make our gluten free lives easier. I review “Find Me Gluten Free” that allows you to find restaurants that have gluten free options on their menus. You can also read reviews from other app users have been to each restaurant. The second app I looked at was “Gluten Free Food Finder”. This app lets you use your phone camera to scan the bar codes on different food items to see if they are gluten free or not. It takes a bit of practice to use the app, but I found it very quick and helpful. The information regarding the products is input by other app users, so when I found a product not in the database, I added it. It was simple. The third app looked at the restaurants at Disney parks and properties. This is a very useful tool for planning any trip to Disney, especially if you have a child eating gluten free. There are lots of reviews as they relate to the presented menus and many tips from past guests. The difference with this app is that only the gluten free options are presented, you don’t have to sift through the entire menu. My daughter used this app and said – “An amazing app for a trip to Disney, so you can plan ahead and enjoy your day just as much as anyone else. Easy to use, and constantly being updated.” You can use Find Me Gluten Free on a PC or tablet at – https://www.findmeglutenfree.com/ Sue’s Websites and Social Media – Podcast – acanadianceliacpodcast.libsyn.com Podcast Blog – acanadianceliacblog.com Facebook - @acanadianceliacpodcast Twitter – CeliacPodcastCA Email – [email protected] Baking Website – suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL (search Sues Gluten Free Baking) Email – [email protected]

Ep 32 CCA Update
I had the pleasure of interviewing Treena Duncan, the incoming President of the Canadian Celiac Association. Treena has some great ideas on how the CCA can look forward with new initiatives to benefit both members and the public. It also seemed the appropriate time to extend an invitation to the different chapters to catch us up on what they have been doing for their members and in their communities. Some chapters were happy to share about events and others had inventive projects and fundraisers. Ep 29 Gluten Free Consumer Survey with Kim Koeller
Who knew that more than a dozen years after sitting with Kim Koeller at the banquet of a Canadian Celiac Conference, we’d be talking on my podcast about her results of a survey of gluten free consumers formulated over ten years. It’s always interesting to me when someone is able to pull on their past experience and career and bring it to the gluten free arena. Kim was a management consultant to whom taking the pulse of consumers was a vital indicator of how interested businesses should proceed. Thanks Kim for bringing your expertise our way. Ep 26 Only Oats Goes Organic
On this Episode of the podcast, I spoke with Manny Sabares of Only Oats, a Canadian company that produces gluten free oats safe for celiacs. They use a strict purity protocol that tracks the farmers, the fields, the seeds, the truck transport and only lets the oat grains into the mill once they have been tested to less than 5ppm of gluten (20 ppm is the gluten free standard). Only Oats is “rolling” out a new line of Organic Gluten Free Oats. Rolled Oats, Quick Oat Flakes and Steel Cut Oats that are both certified Gluten Free and Organic. I’m a big fan of the brand, and asked them to donate oat product for an episode of my baking show about gluten free oats. I have had a great relationship with the company every since. I have worked with them on their customer experience, and will be creating recipes for their new website later this year. In the meantime, you can find the recipes from my oats show at https://www.suesglutenfreebaking.com/oatmeal. Ep 20 Amy Horrock RD - Persistent Gut Issues
This episode is an in-depth discussion with Registered Dietitian Amy Horrock about persistent gut issues after starting a gluten free diet. The GF diet, although like a magic pill for celiac disease often is not the complete answer. For many, the gut responds with partial remission, or other problems. Amy looks at what some of these problems might be, and what might be causing them. The big takeaway is that most of these issues can be cleared up with some diet modifications. Everyone is different, so the solutions must be made through consultation on an individual basis. Eating gluten free and being overweight. It’s very common, but we seldom speak about it. We try so hard to make sure we are eating completely gluten free, that having to concern ourselves about counting calories or sugar or fat, just seems too much to ask. Most of us try to replace our gluten laden foods with gluten free ones, but what is that actually doing to our diet. Listen and as I have a conversation with Registered Dietician Selena De Vries.
