A Canadian Celiac Podcast will explore information, research, lifestyle issues and personal stories of individuals who have celiac disease or non-celiac gluten sensitivity. The host, Sue Jennett has access to some of the prominent minds and personalities in the celiac/gluten free community in Canada. You will learn about new initiatives of the Canadian Celiac Association and how they can benefit you. Sue counts more than 20 years since both she and her daughter have been diagnosed with celiac disease. During that time, she has operated a gluten free bakery, run a celiac kids camp, and is currently producing and hosting a gluten free baking show on cable TV in Ontario. Join Sue’s weekly conversations, as she delves into all things celiac and gluten free.
Ep 213 Update on Dental Issues and Celiac Disease
I’m welcoming back to the podcast Dr. Melissa Ing who is a well accomplished dental educator with a specific interest in celiac disease. Dr. Ing shares with us the information she presented in two lectures at the recent Chicago Midwinter Conference. Her first lecture was titled “Celiac Disease, Non-celiac Gluten Sensitivity and Your Dental Patients”. The second lecture was about nutritional influences on oral and systemic wellness. Melissa is very much into the “Mouth-Body Connection” and teaching a whole-body approach to dental professionals. In 2020, Melissa put together articles she wrote for the CCA’s Better Living Gluten Free Publication on Oral Health. Ellen Bayens of theceliacscene.com has given us some great articles to look at this month. Somehow, she found an article written on the issues of cross contamination in restaurants in Malta. It’s amazing to see that celiacs in another part of the world with a very diverse cuisine from ours have the same issues ordering food in restaurants. As well there is an interesting study that was done recently looking at the blood tests done with children and how indicative they are of a final diagnosis of celiac disease. The aim of this study is to identify a benchmark level for blood tests that would indicate a biopsy for a child is not necessary. We discuss the curious issue of Novak Djokovic, the international tennis star who has publicly said that he is on a gluten free diet for his health. There is more behind this story, and much of it will leave you with more questions than answers. Are you familiar with the FODMAP diet? Ellen explains the premise of the diet and how it is being used by some celiacs who are struggling to gain remission from their symptoms. In Episode 93 of this podcast, I interviewed Steven J. Singer, who runs Fody Foods, helping those who are using the diet as a tool towards better health. Ep 211 Food Bullying and the Gluten Free Diet
The topic of food bullying is a broad one and means different things to different people. To help me tackle with subject, I invited Nicole Byrom, Registered Dietitian with the Canadian Celiac Association to discuss food bullying in the context of the gluten free diet. The act of making someone feel bad for the food they are eating often comes from a place of ignorance about celiac disease and non-celiac gluten sensitivity. Education can be a key factor in your response to a food bully, but issues get more complicated depending on who is the being bullied and who the bully is. Children often face negative comments on their food when away from home and adults often have negative interactions with family members, or they are seen as being needy and high maintenance. Nicole is able to put food bullying in perspective with tips and strategies to empower you or your chid. Ep 210 The Big Gluten Free Pizza Episode
This episode is a fun and informative conversation with two of my friends about Gluten Free Pizza. Fortunately, my friends Ellen Bayens (theceliacscene.com) and Cinde Little (everydayglutenfreegourmet.ca) are experts when it comes to ordering pizza in a restaurant and making pizza in your home kitchen. Ellen gives us some great tips on the questions you need to ask to ensure your gluten free pizza is safe to eat in a restaurant. As well, she gives us some information you can use to decide if ordering a takeout pizza is safe for you. It’s the beginning of February, so that may mean Groundhog Day to some, but to me it means a lively conversation with Ellen Bayens of www.theceliacscene.com. Ellen and I talk about a study looking at a link between atopic dermatitis and celiac disease, along with a publication of a report on increasing prices for gluten free in the UK. Ep 207 Suki The Gluten Detection Dog
On this episode I speak with Kendra, the human who trained Suki to be a Gluten Detection Dog. Kendra speaks about how Suki was trained to alert her if any food, drink or medication contains gluten. Kendra trained Suki during Covid, and although Suki is ready to accompany Kendra into restaurants, stores and on public transportation, the training is ongoing. Kendra takes us through some of the interesting instances when Suki was able to detect very small amounts of gluten, which Kendra would not have been able to detect from ingredient lists. Ep 206 CCA Dietitians and The New Labelling Guide
On this episode I’m speaking with Nicole Byrom RD, and Caleigh McAulay, dietitians with the Canadian Celiac Association. At the CCA’s recent virtual conference, Nicole and Caleigh presented the new CCA Labelling Guide, which, although there have not been new regulations on gluten labelling, clarifies many of the questions Nicole and Caleigh regularly receive. We talk about the term “may contain” and levels of risk involved in certain labelling terminology used in Canada. Ep 203 Catch Up with the CCA
On this episode I speak with Melissa Secord, Executive Director of the Canadian Celiac Association to bring us up to date on recent relevant news items. We look more into how the CCA worked with the Ontario government to inform the Ministry of Health about the advantages of covering the cost of the celiac blood panel for the purpose of diagnosis, and the pilot program that has come from those efforts. Recently, a story about a celiac woman held in travel quarantine made the national news as she was denied a gluten free meal for 40 hours. The CCA got involved to help the woman and bring more awareness of this unacceptable situation. Melissa and I also talked about the labelling of “natural” products, including supplements, and natural treatments. Until now, these products did not require labelling that would identify sources of gluten and recently, the CCA has been working with Health Canada to change the regulations. On this episode I have the pleasure of speaking with Taleen Benson blogger and cookbook author. Taleen started her blog after her husband was diagnosed with a condition that required a gluten free, egg free diet. Taleen has a loyal following for her blog called “Just As Tasty”, and she was encouraged to write a cookbook of gluten free, egg free recipes. The book, called “Just as Tasty, Gluten-free and Eggless Baking Through the Seasons” is available for purchase on Amazon. Taleen explained the process of writing her own cookbook as well as having it available with Amazon print on demand. She was kind enough to send along her recipe for Molasses Cookies Makes about 18 cookies 1 ¾ cups (259g) gluten-free flour blend 1 teaspoon baking soda 1 teaspoon cinnamon ½ teaspoon ginger ½ teaspoon fine sea salt ½ cup (113g) unsalted butter, room temperature ⅔ cup (133g) light brown sugar, packed ⅓ cup (113g) unsulphured molasses 1 tablespoon Bob’s Red Mill Egg Replacer, mixed with 2 tbsp water ½ teaspoon vanilla extract ¼ cup (50g) granulated sugar, for rolling Preheat the oven to 350℉. Line baking sheets with parchment paper and set aside. In a small bowl, whisk the flour, baking soda, cinnamon, ginger, and salt together. Set aside. Using a hand mixer or a stand mixer fitted with the paddle attachment, cream the butter with the brown sugar until smooth. Add the molasses, prepared egg replacer, and vanilla extract and beat to incorporate. Add the dry ingredients and mix on low speed until combined. Roll balls of cookie dough, measuring about 1 tablespoon per cookie, then roll in the granulated sugar. Arrange on the prepared baking sheets, about 2 inches apart. Use your hand to press down on each one to flatten slightly. Bake for 10-12 minutes. Allow the cookies to cool on the baking sheets for at least 10 minutes before removing. Notes: Once mixed with water, the egg replacer must sit for 1 minute to thicken. If you are not looking to replace eggs, you should be able to use 1 egg instead of the egg replacer. Ep 198 Flax and the Gluten Free Diet with Valley Flax Flour
On this episode I chat with Howard Selig who is not only a Registered Dietitian, but a trained chef. After recognizing the nutritional benefits of adding flax in the preparation of some foods for residents of a care home, Howard branched out filling the needs of other care homes by grinding flax seeds for them. Providing flax in different forms to others soon became a business. Howard explains the many nutritional advantages of flax and how it can be a benefit to the gluten free diet. With his baking skills, Howard decided to formulate a flour mix, gluten free of course, along with baking mixes (the one for bread just needs you to add water!). Ep 195 Catching Up with Nicole Byrom RD
It’s great for me to have returning guests on the podcast. Nicole Byrom RD, works with the Canadian Celiac Association as the Health Promotions Manager. When I contacted her about coming back on the podcast, she had a list of things she wanted to inform listeners about. The topic of arsenic in our food comes up often. Nicole tells us why this is important to the celiac population and some ways to reduce arsenic exposure. Nicole is involved in an upcoming webinar about Type I Diabetes and its relation to celiac disease. There is a link below for more information on the webinar. Since this is October, the topic of Halloween candy came up. We both discussed how our celiac daughters were able to make the best of what could be a difficult situation. Ep 194 Finding a Restaurant Solution After a Long Diagnosis Journey
Everyone has a diagnosis story, and I enjoy listening to and sharing many or them. This episode of the podcast is a conversation with Beau Bristow of Nashville TN. Beau was diagnosed as an adult and had a long list of symptoms, which to him were unrelated. Of particular note, was the brain fog, which by reason of the name, you don’t realize at the time, and only once the fog has lifted do you understand what you were missing. Finding suitable restaurants is a pain point for most of us, but in Beau’s case, he was determined to help solve this problem, not only for those of us on a gluten free diet, but for people suffering from other allergies. The approach of the website https://picknic.app/ is to help someone requiring a special diet to find a restaurant that understands and follows suitable procedures for you to eat safely. The website will soon be an app, to be downloaded, but at the moment it is focusing mostly in the Nashville area to get it right – how to onboard restaurants and the rate them as a “pick” for your special diet or not. Ep 193 What's All the Fuss About Pumpkin Spice with Cinde Little
For many people September and October are not as much about Autumn as they are about pumpkin spice everything. Being a baker, this has always interested me, but I have to say, except for pumpkin pie, I had pretty much stayed away. Cinde Little, of the Everyday Gluten Free Gourmet was the best person to get me up to speed on pumpkin spice – is it gluten free? what do we have to look out for? where should we expect to find it? and can we use it at home in baking or drinks? Cinde sent along a photo of her favourite Pumpkin Date Cake, which looks very yummy and you can find the recipe on her blog. As well, she had a work in progress for a pumpkin spice syrup to use at home. I’ve played with what she had, and have given a recipe below, so you can make your own special café drinks at home. After recording with Cinde, I did go out and buy a couple of pie pumpkins. You can see photos and read what I did with them on Episode #193 of my blog www.acanadianceliacblog.com. Homemade Pumpkin Spice Syrup for Café Drinks 1 ½ cups water 1 ½ cups sugar Spices – 1 ½ tsp ground cinnamon, 1 tsp ground cloves, 1 tsp ground ginger, 2 tsp ground nutmeg 1/3 – ½ cup pumpkin puree ½ tsp vanilla extract (optional) Place water and sugar in a saucepan on medium heat. As the mixture heats, add the spices and stir well. Add pumpkin puree depending on your preference – the 1/3 cup will be a mild flavour and the ½ cup will be more pronounced. Heat liquid to simmering. Continue simmer for 5-10 minutes, watching it doesn’t boil over. Remove from heat. Add vanilla extract (optional), which will give a somewhat richer taste. Let mixture cool for 5 minutes. If your pumpkin puree is still a bit lumpy you can use an immersion blender to smooth out the liquid. Pour syrup through a sieve to remove any larger bits of the spice blend or pumpkin. Store in a squirt container or bottle in refrigerator. It’s the beginning of the month again, so I get the pleasure of speaking to Ellen Bayens of theceliacscene.com about some of the topics of interest that have come up during the past month. We discuss the diagnosis story of the family of a Neonatologist in the US who sought out the team at the Celiac Disease Program at Boston Children’s Hospital for help. Ellen and I discuss how comprehensive the whole family approach to treating and further diagnosing family members is. See the link below to the article about this family’s journey. Ellen and I speak about bagels and doughnuts – I’ve ever the purest, but explain to her why fried doughnuts are rare. Also, below is my recipe for Gluten Free Doughnut Holes. In the previous episode of the podcast, I recorded a discussion with my adult daughter Deanna, about our differing attitudes towards celiac disease and the gluten free diet. I am grateful for the opportunity to have these discussions as I suspect that much the same dynamic is going on in other families with multi-generational celiac disease. Also, at the end of that podcast, Episode 191, I included a short “blooper reel” which Ellen refers to and gives a classic insight into mother/daughter interactions. Episode 200 of the podcast is approaching, and I’ve decided to mark that milestone with a special episode allowing Ellen and my audience to ask me questions. If you have a question, or comment you’d like Ellen to pose or discuss with me, please email her at [email protected]. https://theceliacscene.com/sending-kids-school-celiac-disease/ Sue’s Doughnut Holes 1 ½ cups gluten free flour blend (I use ½ cup of each white rice flour, potato starch & corn starch) 1/3 cup white sugar 1/3 cup skim milk powder 1 tsp guar or xanthan gum (omit if your flour blend includes gum) 1 tsp salt 1 tbsp baking powder 1 tsp vanilla extract 2 tbsp oil 2 eggs 2 tbsp water Blend together all the dry ingredients. Add vanilla, oil, eggs and water. Add more water 1 tbsp at a time if batter is too thick. Blend by hand, or with a mixer. Batter should be thicker than pancake batter but not as thick as cookie dough. In a saucepan heat oil to 375° (only fill saucepan less than half full with oil, leaving enough room for the bubbling expansion of the batter). Drop spoonfuls of the batter into the hot oil, cooking only 3 or 4 at a time. Turn to cook evenly till dark golden. Remove onto absorbent paper towel. While still warm, place in a bag with sugar and cinnamon to coat. Can be kept in sealed container 3-4 days. If you want to eat the doughnuts right away, you can drizzle them in icing or chocolate sauce, but just know they will not keep well if they get soggy (so eat them up!) Ep 191 Different Generations Cope with Celiac Disease
On this episode I speak with my daughter Deanna. She has been a guest on the podcast in the past, and I take this opportunity to ask her about some of her attitudes and coping skills dealing with celiac disease and how those compare to my approaches. I was a Mom of two beautiful girls when I was diagnosed, with Deanna’s diagnosis coming five months later, just in time for her fifth birthday. Having suffered from an unknown cause for some very diverse symptoms for many years, my diagnosis became one of questioning every food, not only for me, but for my daughter. In contrast, Deanna doesn’t remember her symptoms prior to diagnosis and has been raised to understand the diet completely and take it in stride. Hopefully, you will find some aspects of each of our perspectives in your approach to the diet and how it affects your life. The Canadian Celiac Association successfully presented two virtual conferences in 2020 and is now gearing up for the 2021 Conference. I speak with Nicole Byrom RD from the CCA who is organizing the conference. This conference will be somewhat different from all other CCA conferences in the past, in that of the two days, November 13th and 14th, the first day will be geared towards those who have been diagnosed for two years or less. The second day will focus on information for those who have been diagnosed longer than two years. On this episode I speak with Carmen from the Ottawa Chapter of the Canadian Celiac Association who came up with the idea of organizing a sleep away camp for kids with celiac disease. The camp was to have occurred last year, but as we all know, the pandemic changed that. The camp did go ahead this past August and I’m thrilled to be able to talk to Carmen about both organizing the camp as well as being on site to ensure the food was prepared and served strictly gluten free. Carmen has two daughters and they both attended camp, along with some of their friends. We talk about a study looking at the gut microbiome of infants, in an effort to identify differences over time in the gut microbiome that later develops into celiac disease. Ep 186 Step Up for Team Celiac
As the pandemic has progressed, organizations have become more creative in adapting their annual events to still continue, but in a different format. That is certainly the case with the Scotiabank Run being held in Toronto. The CCA is heading up Team Celiac and inviting anyone across the country to Step Up for Team Celiac and participate in whatever way they can – choose a suitable distance, walk and run, challenge yourself with more than one distance, or run during the in-person event in Toronto. Other cities host Scotiabank Runs and some of our celiac groups are very involved in the events in their own locations, but if you can’t participate locally, or the Toronto run is your local run, head to the CCA website to sign up to Step Up for Team Celiac. Julie and I also discussed the upcoming virtual CCA conference, which has a different format this year. The first day is for the yet to be, or recently, diagnosed with the second day being for the those of us who have been diagnosed more than a couple of years. I look forward to chatting with Ellen Bayens of www.theceliacscene.com at the beginning of every month to get caught up on celiac and gluten free news that has come to light over the past few weeks. On this episode, Ellen and I speak about a press release from the UK regarding the price increase of rice flour and how it might affect gluten free food producers. Ep 177 Gluten Free in a Gluten Household
There are many things that those of us on a gluten free diet must learn quickly once we receive our diagnosis. For many of us the most challenging is how to prepare and safely eat a gluten free diet, while living in a household that eats gluten. Carla and I discuss this common situation. We offer different suggestions for day-to-day coping and highlight the idea that every family situation is different. What might work for you and your family may not be workable for another. The strictness of the diet is something we all have in common, as well as the frustration of educating our family members. Both Carla and I agree that over time, as a family you will settle into routines that are work-able for your situation – family members begin to understand and accept, children get older and have a greater understanding, and the celiac family member gets better, which makes it all worthwhile. It’s the beginning of June and that means another informative conversation with Ellen Bayens of theceliacscene.com. This past month Ellen has brought us a great deal of information. We start out with a couple of studies, the first into attitudes among celiacs towards dating. There is much hesitation, social anxiety and a tendency towards risky behaviour (gluten-wise). Although Ellen and I are not in the target age group for this study, we can relate to many of the hesitancies from our own lives that are amplified in the dating scene. The second study is an eye-opening look at the awareness of celiac disease in the dental profession. Dr. Melissa Ing, whom I have interviewed for this podcast, surveyed a group of dental professionals before a celiac information session and then again after. She was able to teach them a great deal in a short time regarding questions to be asked when certain symptoms are identified. Ellen has once again brought us new resources, we didn’t even know we needed. Sick Kids Hospital in Toronto has come out with new teaching modules about celiac disease and the gluten free diet. These modules are interactive and suitable for young children to do with parents, or for older kids to do on their own. The information is set out in an easy to use format that would be useful to educate other family members and friends. Ellen shows us a novel way to use the restaurant translation cards from celiactravel.com. On a different level Honeycomb.ai brings us an artificial intelligence solution to finding just the right meal at just the right restaurant to meet your specialty diet needs. Ellen introduces us to Desiree Neilsen RD, who has started a new podcast called The Allsorts Podcast, in which she gets down to earth with practical diet knowledge that will help us all make better food choices. She is a proponent of a plant based diet, and that suits Ellen just fine. Two related topics are discussed – the 10 biggest challenges faced by the gluten free community, and how to order a gluten free meal at a restaurant. There’s lots of overlap here. Finally Ellen tells us about a study that is being done for US patients on atopic dermatitis, and you can get paid to participate. So much news, I think this is my longest interview episode yet. Ep 172 Celiac Awareness Month with Melissa Secord
On this episode I catch up with Melissa Secord, Executive Director of the Canadian Celiac Association. Melissa, along with her small staff is handling the promotion of May, Celiac Awareness Month from a big picture, national perspective. We chat about some of the initiatives that are being done to “Shine a Light” on celiac disease, by having iconic buildings and structures across the country lit up green during this month. We talk about the tag line, or slogan for this year – “It’s Not Pretend”, how it was arrived at and who the target audience is. Happy Celiac Awareness Month! This is the first episode of the month and that means I get to discuss a variety of different topics about celiac disease and the gluten free diet with Ellen Bayens of theceliacscene.com. Ellen and I chat about a Canadian study on the expense and social challenges of the gluten free diet. The study looks at the myth of the diet for weight loss as well as some positive trends with those of us eating gluten free. Ellen introduces me to Gnu Sante, a company making “lunchbox friendly” smoothies for kids that are gluten free and actually good for them. Ellen and I talk very briefly about the suitability of a plant-based diet for those of us eating gluten free. I acknowledged that this is a big subject, and deserves its own podcast episode – something Ellen and I will arrange in the near future. Two very resourceful ladies came into focus on this episode – Selena Devries RD and Cinde Little. Both have large followings on social media – Selena for her professional help with the gluten free diet and Cinde for her new “Healthy Me” course as well as her recipes and videos. Ellen assisted in solving the problem, but it brought so many other questions to my mind about homestay and a special diet. Ep 169 Gluten in the Dental Office
A Conversation with Dr. Melissa Ing, Djenane Lemaire and Miranda Boynton Every once in a while, I hear from one of my previous guests on the podcast that they’ve done something that might be of interest to my listeners. This was the case when Dr. Melissa Ing, who I spoke with on Episode 106 “Celiac Disease and Dental Education”, contacted me recently about research and a poster project a couple of her students had done. On this episode, I speak with Dr. Ing, and two of her students Djenane Lemaire and Miranda Boynton about testing they did on common materials used in dental offices to determine if they contained gluten. The testing included soaps and hand lotions, as well as materials that went directly into a patient’s mouth. The poster was very well received, being awarded second place in a large competition and being chosen for presentation at a major dental conference. We talk about how dentistry can be a first line to diagnosis and how rewarding it was for the students to have their research project about gluten exposure in the dental office so widely received. This week is a delightful and very informative conversation with Mike Rose. Both Mike and his wife Shirley require a gluten free diet. They were considering leaving their home to move to a retirement residence when Mike got to work researching and investigating the options available to them. Mike was a tireless worker for the Canadian Celiac Association for many years and he brought all that knowledge to help him find just the right residence that would be able to provide a good healthy variety of gluten free options to the couple’s meals. Mike shares how his search went, has suggestions if you’re going to be investigating retirement homes, and now that he is moved in is continuing to both educate and communicate with the chef, servers and management for all those who require a gluten free diet. Once again it’s time to chat with Ellen Bayens of theceliacscene.com about articles and information she has brought to our attention over the past month. Ellen and I speak about the curious condition of Giardia and its similarities with celiac disease. We re-visit my recent podcast about the dual-branded alcoholic beverages that are causing great confusion in the celiac/gluten free community. A new drink called Bud Light Seltzer will soon be on the market in Canada, and Ellen and I both have questions. Ellen introduces us to Mike Rose who, requiring a gluten free diet for himself and his wife, has recently moved into a retirement home. I will be having Mike on an upcoming podcast to take a closer look at his challenges and decisions on making the move. Ellen and I can’t get away from talking about food and this month is no different. We chat about a gluten free pizza truck in Victoria called The Art of Slow Food. Ellen has also recently discovered Brazilian Cheese puffs sold frozen from a company called Forno de Minas. I’ve included a link to the Brazilian Market, so you can see what they look like. Ellen shared with us the story of a student from away staying with a local family in her area. The student, who reached out to Ellen is celiac and the homestay family is not familiar with the gluten free diet. Ep 165 Gluten Free Grocery Finds
On this episode I speak with Tabitha who has an Instagram page called Gluten_Free_Canada. The page caught my attention because it only had gluten free grocery store foods. I reached out to Tabitha and was curious to see why she started the page, and what her best food finds were. Tabitha has been diagnosed celiac for more than ten years and enjoys both grocery shopping and reading labels. She makes sure to only feature foods she enjoys. Reading labels is a skill that must be acquired over time and is particularly difficult for the newly diagnosed. Tabitha features some foods on her page, which I didn’t realize were gluten free. I suppose we all get into a routine with our food choices and often don’t take the time to look for new options. Tabitha is now doing that for me. Ep 164 A New Take on Gluten Free Snacking
This episode is a conversation with someone changing the landscape of not only gluten free snacking, but snacking in general by providing new healthy options in some unexpected flavours. Julie Bednarski is a Registered Dietitian as well as a trained chef. Her vision for healthy snacks has brought us an entire product line from the company she founded called Healthy Crunch.
