A Canadian Celiac Podcast will explore information, research, lifestyle issues and personal stories of individuals who have celiac disease or non-celiac gluten sensitivity. The host, Sue Jennett has access to some of the prominent minds and personalities in the celiac/gluten free community in Canada. You will learn about new initiatives of the Canadian Celiac Association and how they can benefit you. Sue counts more than 20 years since both she and her daughter have been diagnosed with celiac disease. During that time, she has operated a gluten free bakery, run a celiac kids camp, and is currently producing and hosting a gluten free baking show on cable TV in Ontario. This week I chat with two individuals involved in planning an Celiac Kids Camp in Eastern Ontario.  Carmen Rupp-Eke of the Ottawa Chapter of the CCA, proposed the idea and Camp Davern near Maberly Ontario was up for the challenge.  Carmen fills us in on her motivation and how she believes the campers will benefit from this unique camp.  Derek from Camp Davern explains the camp programs, sports and facilities as well as how to register.  The camp runs in one or two week sessions from July 5th – 17th.  The website for the camp is campceliac.ca. This week I have the pleasure of speaking with Dr. Melissa Ing D.M.D.  Melissa is Canadian, now working as an educator of Dental Medicine in Boston.  Recently, her focus has been on educating dental professionals about the relationship between celiac disease and oral health.  Melissa’s research of late has involved the materials and substances used in dental procedures and how suitable they are for someone on a strict gluten free diet. Melissa, would like all dental professionals to have the knowledge about the oral signs of celiac disease, so they can refer patients for CD testing, even before it may come to the attention of their GP.  Melissa has participated in educational videos, online webinars and sponsored presentations to raise awareness of CD among dental professionals. Ep 103 Christmas Baking Basics
This week I go solo with a show that takes a deep dive into Christmas baking.  When I operated a gluten free bakery, this was our busiest time of the year.  We had procedures in place to make a large amount of a variety of foods.  Once the bakery closed and I went on to produce two seasons of my gluten free baking show on our local cable channel, I first had to shrink the recipes down to home kitchen size.  You can find the recipes on my website at www.suesglutenfreebaking.com.  Most of the recipes are in shows 5 https://www.suesglutenfreebaking.com/christmas-5 and 6 https://www.suesglutenfreebaking.com/christmas-6, which all have youtube video links to the show segments. I talk about kitchen tips to get and stay organized as well as recipes for cakes, cookies, squares and breads.  I also add in a favourite Christmas morning recipe. Stuffed French Toast 8-10 sturdy slices of gluten free bread, cubed 1 ½ - 2  8 oz pkgs of cream cheese, cubed Beat together – 12 eggs, 2 cups milk & 1/3 cup of maple syrup Place ½ of the bread cubes in an ungreased 9” x 13” baking pan, add the cubes of cream cheese, then top with the remaining bread.  Pour the liquid over the bread mixture, cover and refrigerate over night.  In the morning, bake at 375°for 45 minutes.  You can also add cinnamon nutmeg or raisins to the mix. I like pretty pictures of food and have noticed the trend to “food bowls”.  They are usually presented very artistically, and have caught my interest.  On this episode I speak with Cinde, The Everyday Gluten Free Gourmet about what a food bowl is, and how does the trend work with our gluten free diets. Top with raw tomato and red peppers, maybe some feta cheese and this recipe for Falafel Balls with Tahini Sauce. Thin the tahini sauce with water if desired and drizzle over the bowl. I speak this week with Kate Scarlata RDN, MPH, FODMAP & IBS expert about the FODMAP diet.  We explore what the diet is, and how it relates to both celiac disease, gluten intolerance and IBS.  The diet aims to resolve lingering digestive issues not completely solved by the gluten free diet.  It goes without saying that if you’re celiac or gluten intolerant, you must avoid gluten, but for you individually are there other foods that may be causing discomfort and should be avoided?  We look at the origins of the diet, and how it has helped many people to identify specific food issues.  Kate has authored many books, but her recent book “The Low-FODMAP Diet Step-by-Step” is a comprehensive resource for using the diet to resolve some ongoing digestive issues. The State of Celiac Event held by the Canadian Celiac Association in May was a valuable opportunity for researchers, food producers, physicians and dieticians to present their work to each other, network, and advance the interests of those with celiac disease.  I am pleased to be speaking with one of the presenters on this episode – Dr. Daniel Leffler of Beth Israel Deaconess Medical Center and Medical Director leading up the Celiac Disease Program at Takeda Pharmaceuticals. Dr. Leffler spoke with me about the different streams of current research.  We talked about the practicality of the different treatments and cures being investigated, as well as the impact on quality of life for celiac patients.  Our discussion highlighted the diverse approaches being taken to find a cure, as well as comparing celiac with other conditions, and what makes this a particularly challenging disease to overcome. On Episode 76 of the podcast, I spoke with Kristen Kneff from ImmunsanT about the presentation she gave at The State of Celiac event held in May by the Canadian Celiac Association.  Kristen’s presentation, and our subsequent interview looked at the Phase 2 trial for Nexvax2, a vaccine to minimize the effects of gluten on those with celiac disease.  Recently, the trial was halted, as the vaccine was not performing as expected. This week I speak with Samantha who is of Polish Heritage.  She is Canadian of Polish decent and has spent some time living in Poland.  We chat about traditional Polish foods and how they fit or don’t fit into a gluten free diet.  We also talk about family celebrations and how relatives in Poland would view her special diet. Here’s the recipe she sent for her Lemon Poppyseed Cake – Lemon Poppyseed Cake 1/3 cup poppyseeds 3/4 cup milk 1/2 cup butter 1 tbs lemon zest (or 1 tbs lemon oil/extract) 3/4 cup sugar 3 eggs 2 cup gluten-free flour blend 1 tsp guar gum 1 1/2 tsp baking powder 1/2 cup lemon juice Preheat the over to 325F. Place the poppyseeds and milk together in a bowl and set aside. Beat the sugar and butter together until creamy. Add the eggs one at a time, beating after each one. Mix in the lemon zest or oil. In another bowl combine the dry ingredients. Add the dry ingredients to the butter alternating with the milk and juice (mix milk and juice together first), making three dry additions and two wet. Stir the mixture well after each addition. Pour batter into a bundt pan and bake for 30-40 mins, until a toothpick comes out clean. Let cool completely before removing from pan.  If you'd like, whisk warm water, lemon juice and icing sugar together for a glaze to top the cake. Pour over the cake while it's still in the pan. Orange zest and juice can replace the lemon if you aren't a lemon fan. Dairy-free milk and butter can be used instead, but the cake will not brown. You can bake this in an 8" round cake pan (50-60 mins), but I found it best in baked in a bundt pan (30-40 mins). It’s always exciting for me to be invited to an event like the Live the Smart Way Expo in Ottawa in May.  I had interviewed Kathy Smart, the event’s organizer in Episode 55 of the podcast.  Kathy is a popular speaker and talk show guest who can speak about living well and eating healthy on a gluten free diet.  At the event, I asked attendees some questions about celiac disease and living with a gluten free diet, as well I spoke with three food producers that caught my interest and Kathy Smart herself.  Kathy has a very large following in the Ottawa area, and many of the attendees came just to meet and listen to her.  It was a very uplifting weekend, and I hope some of that comes across in the series of short interviews that make up this podcast.
