Ep 106 Celiac Disease & Dental Education
This week I have the pleasure of speaking with Dr. Melissa Ing D.M.D. Melissa is Canadian, now working as an educator of Dental Medicine in Boston. Recently, her focus has been on educating dental professionals about the relationship between celiac disease and oral health. Melissa’s research of late has involved the materials and substances used in dental procedures and how suitable they are for someone on a strict gluten free diet. Melissa, would like all dental professionals to have the knowledge about the oral signs of celiac disease, so they can refer patients for CD testing, even before it may come to the attention of their GP. Melissa has participated in educational videos, online webinars and sponsored presentations to raise awareness of CD among dental professionals. I have many different interviews scheduled for the first couple of months of 2020, and if there is anything you’d like me to cover, please email me at [email protected]. This week is another solo episode where I reflect on the top six things I’ve learned from my two years of producing the podcast. I briefly look at my motivation for starting the podcast and I try and sum up many of the positive and sometimes challenging experiences I’ve had. Celiac disease and the gluten free diet can be complex and effect different people in different ways. I’ve tried to understand this over my two years, and I’ve been able to identify some things that were truly new to me. Ep 103 Christmas Baking Basics
This week I go solo with a show that takes a deep dive into Christmas baking. When I operated a gluten free bakery, this was our busiest time of the year. We had procedures in place to make a large amount of a variety of foods. Once the bakery closed and I went on to produce two seasons of my gluten free baking show on our local cable channel, I first had to shrink the recipes down to home kitchen size. You can find the recipes on my website at www.suesglutenfreebaking.com. Most of the recipes are in shows 5 https://www.suesglutenfreebaking.com/christmas-5 and 6 https://www.suesglutenfreebaking.com/christmas-6, which all have youtube video links to the show segments. I talk about kitchen tips to get and stay organized as well as recipes for cakes, cookies, squares and breads. I also add in a favourite Christmas morning recipe. Stuffed French Toast 8-10 sturdy slices of gluten free bread, cubed 1 ½ - 2 8 oz pkgs of cream cheese, cubed Beat together – 12 eggs, 2 cups milk & 1/3 cup of maple syrup Place ½ of the bread cubes in an ungreased 9” x 13” baking pan, add the cubes of cream cheese, then top with the remaining bread. Pour the liquid over the bread mixture, cover and refrigerate over night. In the morning, bake at 375°for 45 minutes. You can also add cinnamon nutmeg or raisins to the mix. This recipe was always a hit in our home on Christmas morning. If you have questions regarding your Christmas baking, I’ll do my best to answer. You can email me at [email protected]. Ep 101 What's a Food Bowl and is it Gluten Free?
I like pretty pictures of food and have noticed the trend to “food bowls”. They are usually presented very artistically, and have caught my interest. On this episode I speak with Cinde, The Everyday Gluten Free Gourmet about what a food bowl is, and how does the trend work with our gluten free diets. You can find Cinde’s blog at https://www.everydayglutenfreegourmet.ca Twitter - @LittleCinde Instagram – everyday.gf.gourmet.ca Facebook – Everyday Gluten Free Gourmet Here are a few bowl ideas Cinde along to get your creative juices flowing: Middle Eastern Inspired Bowl – Start with cooked rice and lentils, add roasted onion, zucchini and/or eggplant. Top with raw tomato and red peppers, maybe some feta cheese and this recipe for Falafel Balls with Tahini Sauce. Thin the tahini sauce with water if desired and drizzle over the bowl. Enjoy! https://www.everydayglutenfreegourmet.ca/fw-recipe-slug/falafel-balls-tahini-sauce/ Vietnamese Rice Noodle Bowl – This one starts with rice vermicelli, cucumber, carrot, lettuce, fresh herbs and chopped peanuts. The recipe includes a lemongrass marinade that can be used on chicken, shrimp or pork. At the table pour the Nuoc Cham Dipping Sauce over your bowl and enjoy. https://www.everydayglutenfreegourmet.ca/fw-recipe-slug/gluten-free-vietnamese-rice-noodle-bowl/ Greek Inspired Bowl – Try this one with cooked brown rice or quinoa. Make a composed version of this Greek Summer Salad then complete the bowl with fresh spinach, and maybe some roasted carrots, butternut squash or eggplant. The vinaigrette dressing from the salad can be served on the side so it flavours the rice too. https://www.everydayglutenfreegourmet.ca/fw-recipe-slug/gluten-free-greek-summer-salad/ For a weekend treat or brunch with friends try this indulgent Breakfast Power Bowl – It has cooked quinoa with bacon, sweet potatoes, raw spinach, avocado and cherry tomatoes all drizzled with a blender hollandaise. https://www.everydayglutenfreegourmet.ca/fw-recipe-slug/breakfast-power-bowl/ Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Facebook - @acanadianceliacpodcast Twitter – CeliacPodcastCA Email – [email protected] Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL (search Sues Gluten Free Baking) Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 98 Autism and the Gluten Free Diet
I like a good story, and this week we have one – A Mom, looking for a way to enhance her autistic son’s development tried him on a gluten free diet. Not only did she notice a positive difference for her son, but it led her to start a gluten free food company. Autistic children often have very specific taste and mouth-feel preferences in foods. Keri’s son loved perogies, but on a gluten free diet, they were almost impossible to find. After much trial and error, Keri developed a recipe and method for making gluten free perogies commercially. The company, located in Lacombe, Alberta – Stella’s Perogies now produces 15,000 perogies a day! Ep 97 Cruising with Celiac Disease
I have recently returned from a very enjoyable cruise with extended family members. Cruising with celiac disease is often approached cautiously, but with the right preparation, can be safe, relaxing and exciting. This week I chat with Nick Medeiros, a fellow celiac and travel agent from California who has set up a Facebook page “Cruising with Celiac”. This group fields questions and actively discusses different cruise ships and cruise lines and their suitability for someone on a strict gluten free diet. Nick and I discuss many of the dining options on different ships, what you should know, before you book and what questions you should ask. This week was the continuation of a discussion on the FODMAP diet. I speak with Steven J. Singer who started a food company called Fody Foods to provide foods that fit into the FODMAP diet. Ketchup made without garlic, isn’t something that occurs to me, but I can appreciate that if garlic causes you stomach issues, this could be very special. Steven had been an owner of Glutino Foods, before starting Fody Foods. He is strongly rooted in gluten free and brings that wealth of knowledge to his FODMAP friendly foods. You can find out more about this unique food company at www.fodyfoods.com. Ep 92 What is the FODMAP Diet, and Why Should I Care?
I speak this week with Kate Scarlata RDN, MPH, FODMAP & IBS expert about the FODMAP diet. We explore what the diet is, and how it relates to both celiac disease, gluten intolerance and IBS. The diet aims to resolve lingering digestive issues not completely solved by the gluten free diet. It goes without saying that if you’re celiac or gluten intolerant, you must avoid gluten, but for you individually are there other foods that may be causing discomfort and should be avoided? We look at the origins of the diet, and how it has helped many people to identify specific food issues. Kate has authored many books, but her recent book “The Low-FODMAP Diet Step-by-Step” is a comprehensive resource for using the diet to resolve some ongoing digestive issues. Ep 89 Mental Illness and Celiac Disease
This week I have a very personal conversation with Erin, a gluten free blogger about her struggles with mental illness. We often talk about the roller coaster of emotions after a diagnosis and starting a gluten free diet, but Erin’s experiences became more life-altering. Anxiety and Depression became a way of life, with celiac disease and the gluten free diet always playing a part. Erin gives some great coping advice that we can all use, regardless of how much we are swayed by our emotions and state of being. Ep 88 Plant Based Burger Breakdown
This week I set out to get some answers about plant based burgers. They seem to be everywhere, but I didn’t know anything about them. I called on Registered Dietitian Selena DeVries for help. Selena has been on past podcast episodes, and she does a great job breaking down the nutrition and ingredients in the new plant based burgers. I took it upon myself to try one on the barbeque at home, to get my reaction as well as those of my husband and daughter. Listen after the interview with Selena to hear my opinion about cooking up one of these burgers at home and trying it for the first time. Ep 85 The State of Celiac Research with Dr. Leffler
The State of Celiac Event held by the Canadian Celiac Association in May was a valuable opportunity for researchers, food producers, physicians and dieticians to present their work to each other, network, and advance the interests of those with celiac disease. I am pleased to be speaking with one of the presenters on this episode – Dr. Daniel Leffler of Beth Israel Deaconess Medical Center and Medical Director leading up the Celiac Disease Program at Takeda Pharmaceuticals. Dr. Leffler spoke with me about the different streams of current research. We talked about the practicality of the different treatments and cures being investigated, as well as the impact on quality of life for celiac patients. Our discussion highlighted the diverse approaches being taken to find a cure, as well as comparing celiac with other conditions, and what makes this a particularly challenging disease to overcome. I was left with a real sense of hope that doctors and researchers are pursuing different strategies to find a cure, and improve our quality of life. The gluten free diet is an imperfect treatment, and it’s comforting to realize that the medical/research community is looking beyond the gluten free diet for a cure. Ep 84 Gluten Free Stampede Breakfast
On this episode of the podcast I speak with the Event Planning & Coordinator for the Calgary Chapter of the Canadian Celiac Association, Cheryl Richmond. The Calgary Chapter has been holding a gluten free breakfast as part of Calgary Stampede celebrations for more than 20 years. The breakfast has grown and so have their community sponsors and relationships. This year they served up 564 breakfasts of pancakes and sausage. Their primary sponsors were, Kinnikinnick Foods (pancake mix), Spolumbo’s Fine Foods & Deli (sausages), Judy G Foods (promotional pizza coupons) and Shine FM providing a Kid’s Fun Zone. With more than 150 breakfasts going on in the city during the Stampede, it takes many months working with the Stampede Committee to get all the details just right. The Calgary Stampede Promotions Committee was able to help out by providing – The Batter Boys with a Cook Wagon, Western Welcome & Branding, a Roper (to lasso customers!) and Harry the Horse. Sounds like great food and good fun! Ep 83 Nexvax2 - What's Next?
On Episode 76 of the podcast, I spoke with Kristen Kneff from ImmunsanT about the presentation she gave at The State of Celiac event held in May by the Canadian Celiac Association. Kristen’s presentation, and our subsequent interview looked at the Phase 2 trial for Nexvax2, a vaccine to minimize the effects of gluten on those with celiac disease. Recently, the trial was halted, as the vaccine was not performing as expected. Ellen Bayens of theceliacscene.com brought this to my attention in an article looking at both the press release from ImmunsanT and a position piece from Dr. Peter Green. On this episode of the podcast, Ellen and I speak about what this news means for the research community as well as the impact on the celiac community. Ep 80 Being Polish Canadian and Gluten Free
This week I speak with Samantha who is of Polish Heritage. She is Canadian of Polish decent and has spent some time living in Poland. We chat about traditional Polish foods and how they fit or don’t fit into a gluten free diet. We also talk about family celebrations and how relatives in Poland would view her special diet. Here’s the recipe she sent for her Lemon Poppyseed Cake – Lemon Poppyseed Cake 1/3 cup poppyseeds 3/4 cup milk 1/2 cup butter 1 tbs lemon zest (or 1 tbs lemon oil/extract) 3/4 cup sugar 3 eggs 2 cup gluten-free flour blend 1 tsp guar gum 1 1/2 tsp baking powder 1/2 cup lemon juice Preheat the over to 325F. Place the poppyseeds and milk together in a bowl and set aside. Beat the sugar and butter together until creamy. Add the eggs one at a time, beating after each one. Mix in the lemon zest or oil. In another bowl combine the dry ingredients. Add the dry ingredients to the butter alternating with the milk and juice (mix milk and juice together first), making three dry additions and two wet. Stir the mixture well after each addition. Pour batter into a bundt pan and bake for 30-40 mins, until a toothpick comes out clean. Let cool completely before removing from pan. If you'd like, whisk warm water, lemon juice and icing sugar together for a glaze to top the cake. Pour over the cake while it's still in the pan. Orange zest and juice can replace the lemon if you aren't a lemon fan. Dairy-free milk and butter can be used instead, but the cake will not brown. You can bake this in an 8" round cake pan (50-60 mins), but I found it best in baked in a bundt pan (30-40 mins). Ep 79 News From Only Oats
On this episode I chat with Mike Marshall, Chief Operating Officer at Only Oats. Most of us are familiar with the bright blue 1kg bags of oats - rolled, quick, steel cut and flour. Only Oats was a major sponsor of the State of Celiac events held by the Canadian Celiac Association in Toronto in May, Celiac Awareness Month. Mike tells us why Only Oats is no longer Avena Foods, what has changed in the company and what has stayed the same. He gives us a lesson on how Only Oats is using Purity Protocol to maintain a celiac safe product. Mike also tells us of new stores currently, and soon to be, stocking Only Oats. As well, he teases us with a few new products in the works using the trusted oat source. Ep 78 Live the Smart Way Expo
It’s always exciting for me to be invited to an event like the Live the Smart Way Expo in Ottawa in May. I had interviewed Kathy Smart, the event’s organizer in Episode 55 of the podcast. Kathy is a popular speaker and talk show guest who can speak about living well and eating healthy on a gluten free diet. At the event, I asked attendees some questions about celiac disease and living with a gluten free diet, as well I spoke with three food producers that caught my interest and Kathy Smart herself. Kathy has a very large following in the Ottawa area, and many of the attendees came just to meet and listen to her. It was a very uplifting weekend, and I hope some of that comes across in the series of short interviews that make up this podcast. Ep 77 Treena Duncan and Mark Johnson
May is Celiac Awareness Month and I am pleased to be collaborating with the Canadian Celiac Association to produce podcasts to support their theme of “Beyond the Gut”. The CCA hosted a conference on The State of Celiac bringing together researchers, doctors, dietitians, food producers, influencers and others who had a stake in the future of celiac disease and the gluten free diet. I was fortunate to attend this event and was able to have short interviews with some of the speakers and attendees. During this last week of Celiac Awareness Month, the podcast will consist of five interviews each highlighting one of the speakers and topics that I found of interest. I work with the CCA all year, but it was a special privilege to be invited to their events in Toronto. It was a busy weekend, with The State of Celiac Leadership Forum, the fundraiser for research, administrative meetings and my appearance at the Gluten Free Garage to meet with lots of other celiacs and those on a gluten free diet. It takes a great deal of effort to put on these events and it also takes a great deal of foresight to see how all this work will benefit the CCA in it’s planning for the future. On this final episode for Celiac Awareness Month, I speak with Mark Johnson, who was instrumental in planning the forum and fundraiser, as well as Treena Duncan, President of the CCA for her views on how these meetings will contribute to the CCA going forward. We are all looking for a better treatment for Celiac Disease. The gluten free diet is effective, but as we’ve seen it’s not a completely gluten free diet because of test restrictions etc., and it is difficult. The research panel at the State of Celiac event had a presentation on a new treatment for celiac that is currently in clinical trials. The more I learned, the more interested I became. My conversation on this episode is with that panelist, Kristen Neff of ImmunsanT and I’m grateful to have the opportunity to ask her more about their research and a potential therapy. Ep 72 Enjoy Life Foods
I was fortunate to attend this event and was able to record short interviews with some of the speakers and attendees. During this last week of Celiac Awareness Month, the podcast will consist of five interviews each highlighting one of the speakers and topics that I found of interest. This episode is a discussion with Joel Warady, who is the General Manager, Chief Sales & Marketing Officer for Enjoy Life Foods. Ep 70 Beyond the Gut Symptoms with Dr. Rashid
May is Celiac Awareness Month and I am pleased to be collaborating with the Canadian Celiac Association to produce podcasts to support their theme of “Beyond the Gut”. This episode is a discussion with Dr. Moshin Rashid, MD, Med, FRCP (C), Professor of Paediatrics Gastroenterology & Nutrition at Dalhousie University and after many years on the Professional Advisory Committee of the CCA is now serving on the Education Committee of the CCA. Dr. Rashid gives us a comprehensive overview of many of the non-gut-related symptoms that patients present with prior to a diagnosis of celiac disease. Ep 68 Dental Issues and Celiac Disease
May is Celiac Awareness Month and I am pleased to be collaborating with the Canadian Celiac Association to produce podcasts to support their theme of “Beyond the Gut”, a look at the less common symptoms leading to a diagnosis of celiac disease. This week I speak with Dr. David Stevenson, President of the Ontario Dental Association. We discuss some abnormal dental issues that may be a direct cause of undetected celiac disease. We also chat about how a diagnosis can change the way your dental professional structures your care. Surprisingly, we also highlight the importance of sharing a full medical history with your dentist, even though you don’t think it has anything to do with your teeth. The CCA has an informative document on the link between dental health and screening for celiac disease. Ep 67 New Study on a Screening Test for Celiac Disease in Children
I was intrigued to speak with Dr. Herbert Brill of William Osler Health System regarding the study he did with other health care professionals on the efficacy of the DGP blood test with children referred for further consultation in screening for celiac disease. The study focussed on children with a negative TTG test and a positive DGP test. The study concluded the test was not useful in screening children for celiac disease in the general population. You can find an article about the study on the William Osler Health System website or at the following link – http://bit.ly/DGPTestStudy This study was brought to my attention by a post from Ellen Bayens of The Celiac Scene. You can subscribe to her newsletter at www.theceliacscene.com. Thanks Ellen! Ep 64 Eating Gluten Free in Airports
Have you ever been excited or anxious to fly, but then realized you still had to worry about what you’d be able to eat while waiting to board, or worse still what would happen if the flight was delayed and you're stuck beyond the security line with nothing to eat? My guest this week, Lisa, has taken it upon herself to write to Customer Service at the Vancouver Airport to request more gluten free options. We chat about her motivation, how the airport responded to her and a great example of how one airport is stepping up for gluten free food. Lisa originally posted her letter to the airport on her facebook page and has since re-posted it. You can find her on facebook @GFKetogirl.
