The one who checks all the facts and regulates when we mistakenly type “Verdicchio” in place of “Vermentino.” Attilio Scienza is a full professor at the University of Milan in the Department of Agricultural and Food Sciences where he teaches courses on genetic improvements to the vine; he also teaches Viticulture in the Master’s program of the University of Turin in Asti. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. As the author of over 350 publications on vine and viticulture in national and international journals, you can bet he knows his stuff!

The Valentino Butussi winery is located on Via Forum Julii, an ancient Roman road that connected Cividale del Friuli to Aquileia, in the hilly part between the Rosazzo hill and the Gramogliano hill. Martina is Bruna Grimaldi’s daughter. After graduating in Business Administration and studying abroad for a couple of years she worked as a Wine Buyer in London but since December 2018 she has returned to Grinzane Cavour in the Barolo region of the Langhe to help the family enterprise. Together with her brother Simone, who joined the family estate earlier, they form a formidable team. Simone mostly focuses on the production (vineyard and winery management) whilst Martina looks after the commercial and administrative things of business. Being a small estate we all work together as a family team. The Grimaldi story begins in the 1950s with Martina’s great grandfather, but its most recent chapter is being expertly written by Simone and Martina who work side by side with their parents Bruna and Franco. It has been a dynamic last decade for the family, with the next generation stepping up.

McKenna found her love of wine while serving in a Napa Valley tasting room. She later graduated from the University of Notre Dame and pursued wine on the East Coast with E. & J. Gallo Winery. She has worked in wine distribution for restaurants and luxury retail stores for the past three years.
Originally from Phoenix, Arizona, McKenna is a Certified Specialist of Wine (2021), Certified Sommelier (2022), and Italian Wine Ambassador (2023).

More about today’s guest
Melissa Muller spent her early years hearing about the international tax treaties that her father composed from his Wall Street law firm. While an official “desk” in his office was waiting for her, Melissa had another destiny in mind. Although exposed to foreign travel and study abroad from a young age, every year Melissa felt the need to spend her summer months in her maternal grandmother’s small village in Sicily, in the island that would later inspire both her studies as well as her professional realm.
She studied anthropology at Columbia University, where she also obtained a master’s degree in journalism. Her research focused on the gastronomy of the Mediterranean regions. She was intrigued how Sicily is a unique crossroads of civilizations and how its history is visible and tangible in the island’s cuisine. Through food, Melissa had found a way to travel through the past centuries of Sicily.
After her studies, Melissa chose to open a Sicilian restaurant in New York that became a laboratory where she shared her love of Sicilian cuisine, along with her cultural research of the island. After several years of intense research, she wrote a cookbook, Sicily: Recipes Rooted in Tradition, published by Rizzoli.

The one who checks all the facts and regulates when we mistakenly type “Verdicchio” in place of “Vermentino.” Attilio Scienza is a full professor at the University of Milan in the Department of Agricultural and Food Sciences where he teaches courses on genetic improvements to the vine; he also teaches Viticulture in the Master’s program of the University of Turin in Asti. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. As the author of over 350 publications on vine and viticulture in national and international journals, you can bet he knows his stuff!

Scott Thomas is a wine culturalist, educator, and sommelier with a twenty-year career in the wine industry. He is the founder of Grappolo Wine School, a Denver-based academy offering immersive wine travel, wine events, and structured courses, including the VIA's Italian Wine Maestro certification. He is also the wine director at Restaurant Olivia, a pasta-focused concept with an Italian-heavy wine list.
His passion for Italian wines grew during his two years in Piedmont and Tuscany, where he earned a Master's in Wine Culture from Slow Food's University of Gastronomic Sciences and gained practical experience in the vineyards of Chianti Classico. Scott's professional credentials include Italian Wine Ambassador and educator, Certified Wine Educator, WSET III, and an official Orvieto Ambassador and Langhe Wine Ambassador.

Lia is an inspiring leader who since 2004 has grown Banville Wine Merchants to a team of over 70 people with a portfolio that includes top producers from Italy, France, Germany, Slovenia, Argentina, New Zealand, and the USA. Banville Wine Merchants is a national importer, and as well, they have wholesale businesses in five states: New York, New Jersey, Washington, DC, Virginia, and Oregon. In 2020 Lia created Banville Wine Merchants wine agency in Canada in Ontario and Manitoba.
Lia also owns the highly acclaimed Tolaini winery in Castelnuovo Berardenga, Tuscany Italy that was started by her father Pier Luigi Tolaini in 1998. In 2006 as well Lia developed Donna Laura, a winery producing 4 Sangiovese based wines from the Chianti Classico region.
Lia’s children -Alicia, Alex, and Matteo – are also now working with Lia in the family businesses.

SARDINIA TERROIRS is an ambitious plan and a shared outlook, to narrate Sardinia trough its wine-producing excellencies made of people, wines and territories, and reunited under a common ideal, that is increasing the recognisability of Sardinian wines among the international market as representative of terroirs that are capable of expressing an enological culture of great quality and tradition.
The cluster SARDINIA TERROIRS collects under the same project different winemakers, different vineyards and different terroirs. The goal is narrating the uniqueness of Sardinian wines and their producers, as well as the uniqueness of their areas of origin. Eight wineries for eight territories, each one vocated to the major autochthonous vine varieties of Sardinia: the region of Logudoro with its Vermentino di Sardegna, the Oristanese with Bovale, the Mandrolisai area with the blend Cannonau-Bovale-Monica, Gallura with its Vermentino di Gallura, the regions of the Nuorese and the Ogliastra with their Cannonau, and finally the Nuragus in the Cagliaritano and the Carignano in the Sulcis.

“Since 2004, immediately after graduating, I have been working in the family business with my father and my brother. Today I am the administrator of the company.Even just a generation ago in Italy, a winemaker like my father would have expected his son or his daughter’s husband to lead a winery like his. But after being charged with carrying on this legacy, between business, social media and knowledge of grape growing and winemaking practices, I am bringing, together with my brother, my family’s historic estate into the 21st century. I deal with marketing and commercial relations with our costumers in Italy and around the world, but as a member of the family I try to contribute with my work to the entire management of the company, from the vineyard (the property is 70 hectares on the on the highest areas of the hills between Monteforte and Soave) to the sale of our wines. I also take care of the management of our small bistro in Soave: Enoteca Realda, born from my great passion for food and restaurants. All this with great passion, enthusiasm and always with a romantic vision of this land wich creat values, good vibes and right traditions.

He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. As the author of over 350 publications on vine and viticulture in national and international journals, you can bet he knows his stuff!

Scott Thomas has an extensive twenty-year career in the wine industry, with roles as a sommelier, in distribution and sales management, and education. He is the founder of Grappolo Wine School in Denver, which offers immersive wine travel, wine events, and structured courses, including the VIA's Italian Wine Maestro certification. In addition, he’s the wine director at Restaurant Olivia, a mighty pasta-focused concept with an Italian-heavy wine list.
Scott's professional credentials include Italian Wine Ambassador, Italian Wine educator, and Certified Wine Educator. Additionally, he is an official Orvieto Ambassador and Langhe Wine Ambassador. His passion for Italian wines grew during his two years in Piedmont and Tuscany, where he earned a Master's degree in Wine Culture from Slow Food's University of Gastronomic Sciences and gained practical experience in the vineyards of Chianti Classico.

Elisabetta Fagiuoli has a spirituality about her that is present in her wines. She is the owner of Montenidoli in the San Gimignano region of Chianti, Tuscany. Montenidoli means "the mountain of the little nests" and it is comprised of 26 hectares of vineyards surrounded by 200 hectares of woodlands.
The property which she owned with her late companion Sergio was brought under vine in 1965, and at the time was abandoned wilderness. Located on the top of hills, the farm is remote and has spectacular vistas of the Chianti hillsides. There is a profound respect of the vineyard and the land which is clearly present in the winemaking at Montenidoli. (Credit Grape Collective)
Alessio Cecchini is a young, florentine-based winemaker. Working beside Elisabetta since 2019.
He’s been traveling all over the world, making wines in New Zealand, Australia, South Africa, Burgundy and Montalcino before settling at Montenidoli. His studies were focused on concrete fermentations of Sangiovese and biodynamic farming.
Today he supervises the winemaking process and travels the world as an ambassador for Montenidoli.

The Fongaro Winery was born in 1975 from the passion and commitment of its founder, Guerrino Fongaro. Since the beginning the founder’s strongly believed in the cultivation of an native Veronese grape variety: Durella. The name of the grape also gives the name to the type of wine developed: Durella the grape, Durello the wine. The Durella is one of the oldest and most typical vines of the Lessini Mountains, area where the company stands. The winery is located in Roncà (province of Verona) and is part of the Lessinia National Park where an extinct volcanos left us a fantastic soil structure composed of basalt. In 1975 the Fongaro Winery decided to focus its activity on the exclusive production of Classic Method Sparkling Wines. The use of this grape variety (Durella) with particular characteristics, enhanced in the sparkling process, and the long skilled experience made it possible today to offer a unique and unmistakable product in the panorama of Traditional Method Sparkling Wines. An added value to our Spumante was the advance of the times’ choice, since 1985, to embrace the principles of organic agriculture, becoming one of the first organic winery in the Veneto region. This style of production once again underlines the respect and love for the land, and also guarantees high standards of the product’s quality.To date, the management of the company has passed into the hands of Tanita Danese, a young agriculturist and oenologist who has long been linked to the Fongaro family. With her skills and experience, she is expanding the vision of the winery, inextricably linking tradition and innovation.

Born in Mexico, with a mother from Hawaii via Korea and an anthropologist father from New York via Paris, he was weaned on exotic and delicious foods. Marc and his photographer wife Kim are the authors of 14 books including a pioneering series of illustrated wine-food-travel books: The Wine Roads of Europe, The Wine Roads of France, The Wine Roads of Italy (Premio Barbi Colombini), and The Wine Roads of Spain. More about today’s winery - Tornatore Winery
The company's agricultural activity is based on the ownership and direct control of a joint-stock company which owns 60 ha of land located in the Castiglione di Sicilia countryside and another 40 ha held directly. Approximately 46 ha of land are cultivated with vineyards, 8 ha with olive groves and 5 ha with hazelnut groves, the rest is being reconverted; for this reason, today the Tornatore company owns the largest vineyard within the Etna Doc production area. By extension, the vineyards of the Tornatore company today constitute the largest Etna DOC vineyard in the production area. There are various districts affected by the company's vineyards: among these the prestigious districts of Crasà, Pietrarizzo, Malpasso, Pietramarina, Torre Guarino, Carranco and Trimarchisa, all in the municipality of Castiglione di Sicilia. The altitude varies from 550 to 700 m above sea level and the age varies from 5 to 45 years for reds and 5 years for whites.

Later Karoline deepens her knowledge through various internships as well as graduating from her WSET Diploma studies to finally return to the Elena Walch estate in 2013 and take over, together with her sister Julia, the reins of the family business.

She chose a different education - engineering economics, to spread her views and decided to be a winemaker fulltime in 2017. From then she has been putting her hands and heart into the depth of winemaking. In 2020 she decided to work in Burgundy for a whole year and returned home even more focused and determined to give a sharp identity to her hills in Collio.

Daria Kholodilina, also known as Dariko, is a passionate wine educator, tour planner, and Georgian wine expert based in Tbilisi, Georgia. With a background in tourism and marketing, she transitioned to the world of wine in 2017, where she now specializes in organizing wine tours, hosting tastings, and providing training both in-person and online. Daria shares her knowledge through tastings, master classes, and lectures, and she's offering her Georgian wine crash courses. She holds WSET Level 3 certification with Distinction, and collaborates with European wine importer FineGrapes.ge.
She co-authored the guidebook "Georgia: A Guide to the Cradle of Wine" and has been organizing private wine tours under the Trails and Wines brand since 2018.
Recognized for her contributions to the wine industry, Daria received the Emerging Talent in Wine Award from the IWSC in 2024, and she holds the prestigious titles of Georgian Wine Expert from the Georgian Sommelier Association and Georgian Wine Ambassador from the National Tourism Award "Welcome to Georgia."

Born in the USA, she’s lived in Europe since 1990. Italian wine, in particular rosé, is her passion. She works with embassies, corporations and private clients, creating and presenting tastings, events, seminars and in-depth courses. Cynthia is a wine writer, a judge at international wine and sake competitions, she consults with restaurants and enotecas developing comprehensive wine lists and food pairings, and she advises clients who want to curate an Italian wine collection. She currently works for Vinitaly International in Verona as a Project Manager, Educator, and the host of VOICES Series on The Italian Wine Podcast, focusing on diversity and inclusion in the global wine industry.

We design food with narrative. Our story is about courage, creativity and omotenashi, a very distinctive service.
KUKUNOCI is rooted in Verona and its surroundings. We are about nowness and here-ness.
We believe the future is about reconnecting with heritage and ancient methods. We are constantly researching into Italian and Japanese traditional ways of processing food, unknown flavours and forgotten produce.
KUKUNOCI started and operates as a private dining club offering a set menu of eight courses with or without wine pairing.
Close to Piazza Bra, the flat offers a unique design in a quiet and comfortable location. The interiors are the perfect set for dinner, either for social gathering or professional meetings requiring that extra privacy.
We are able to cater for most requests, thus keeping in mind the we do love food and are unable to change recipes for our guests. We will be more than happy to offer our best alternatives.

Marc Millon, VIA Italian Wine Ambassador 2021, has been travelling, eating, drinking, learning and writing about wine, food and travel for nearly 40 years. Born in Mexico, with a mother from Hawaii via Korea and an anthropologist father from New York via Paris, he was weaned on exotic and delicious foods. Marc and his photographer wife Kim are the authors of 14 books including a pioneering series of illustrated wine-food-travel books: The Wine Roads of Europe, The Wine Roads of France, The Wine Roads of Italy (Premio Barbi Colombini), and The Wine Roads of Spain. Other titles include The Wine and Food of Europe, The Food Lovers’ Companion Italy, The Food Lovers’ Companion France, Wine, a global history. Marc regularly lectures and hosts gastronomic cultural tours to Italy and France with Martin Randall Travel, the UK’s leading cultural travel specialist. The company's agricultural activity is based on the ownership and direct control of a joint-stock company which owns 60 ha of land located in the Castiglione di Sicilia countryside and another 40 ha held directly. Approximately 46 ha of land are cultivated with vineyards, 8 ha with olive groves and 5 ha with hazelnut groves, the rest is being reconverted; for this reason, today the Tornatore company owns the largest vineyard within the Etna Doc production area. By extension, the vineyards of the Tornatore company today constitute the largest Etna DOC vineyard in the production area. There are various districts affected by the company's vineyards: among these the prestigious districts of Crasà, Pietrarizzo, Malpasso, Pietramarina, Torre Guarino, Carranco and Trimarchisa, all in the municipality of Castiglione di Sicilia. The altitude varies from 550 to 700 m above sea level and the age varies from 5 to 45 years for reds and 5 years for whites.
