Sue Jennett: gluten free baker and podcaster
A Canadian Celiac Podcast will explore information, research, lifestyle issues and personal stories of individuals who have celiac disease or non-celiac gluten sensitivity. The host, Sue Jennett has access to some of the prominent minds and personalities in the celiac/gluten free community in Canada. You will learn about new initiatives of the Canadian Celiac Association and how they can benefit you. Sue counts more than 20 years since both she and her daughter have been diagnosed with celiac disease. During that time, she has operated a gluten free bakery, run a celiac kids camp, and is currently producing and hosting a gluten free baking show on cable TV in Ontario. Ep 165 Gluten Free Grocery Finds
On this episode I speak with Tabitha who has an Instagram page called Gluten_Free_Canada. The page caught my attention because it only had gluten free grocery store foods. I reached out to Tabitha and was curious to see why she started the page, and what her best food finds were. Tabitha has been diagnosed celiac for more than ten years and enjoys both grocery shopping and reading labels. She makes sure to only feature foods she enjoys. Reading labels is a skill that must be acquired over time and is particularly difficult for the newly diagnosed. Tabitha features some foods on her page, which I didn’t realize were gluten free. I suppose we all get into a routine with our food choices and often don’t take the time to look for new options. Tabitha is now doing that for me. Ep 164 A New Take on Gluten Free Snacking
This episode is a conversation with someone changing the landscape of not only gluten free snacking, but snacking in general by providing new healthy options in some unexpected flavours. Julie Bednarski is a Registered Dietitian as well as a trained chef. Her vision for healthy snacks has brought us an entire product line from the company she founded called Healthy Crunch. Her goal to produce safe snacks that are not only gluten free, but top allergen free, means that Healthy Crunch needed to develop their own flavourings from real ingredients. This may not sound special, but in the food industry it is most common to produce a product, then prepare it with a variety of different commercial flavourings to fill the product line. Ep 163 Beverage Controversy
Let’s start the blog with the show notes for this Episode – On this episode I speak with my daughter Deanna regarding a curious question she posed to me recently about some newly launched seltzer drinks appearing in the beer stores here in Ontario. These drinks contain barley malt, so off limits to us. The problem is the same drinks are in our LCBO (liquor stores) in Ontario, same branding, but with vodka or another alcohol and no barley malt. This means that we should be able to drink the ones bought from the liquor store. The problem boils down to the branding. These two different drinks have the same name, the same branding and packaging. The malt beverage says in very small letters on the packaging “malt beverage”. Deanna and I discuss this problem and what issues we see it causing for those of us requiring a gluten free diet. It’s the beginning of March and time again to talk with Ellen Bayens of theceliacscene.com to delve into some of the studies and information she has brought us over the past month about celiac disease and the gluten free diet. Ellen and I talk about a new non-invasive patch that might make diagnosis of celiac disease easier and might be a great tool where patients don’t have access to sophisticated medical labs. Also, there is a study Ellen has highlighted done in the UK looking at why the diagnosis of celiac disease is often missed or slowed and what steps could be taken to overcome these issues. The necessity for a gluten challenge to diagnose those who have already started a gluten free diet has long been an issue for our community. Ellen tells us that researchers are working on a test that might allow those already on a gluten free diet to still be properly diagnosed. I was curious to learn from Ellen about one of the directions of research into Covid-19 that might have repercussions for celiac disease. Long-haul Covid-19 patients are showing signs of an autoimmune reaction which the researchers find curious and may lead to more investigation into the triggers for autoimmune conditions including celiac disease. Ellen and I always get around to talking about food and on this episode we discuss an article presented by Schar about wheat starch, which is common in Europe and not well understood in North America. Ep 161 A Child Diagnosis Story
We’ve spoken before about some of the differences in the diagnosis of a child as opposed to an adult. On this episode I speak with Lisa Rigney about how her daughter was diagnosed and some of the immediate changes it made to the family dynamic. It’s easy in hindsight to look back and see some symptoms in a child that were clearly missed as the family went about their daily lives. Ep 160 Family Tip of the Iceberg
Diagnosis stories are always interesting. Some are very short, some take longer, and some standout because of their complexity. On this episode I speak with Dr. Jenny Jagers, who has a doctorate in medicine, but is not a medical doctor. She was able to recount her time before diagnosis, as well as the varied symptoms that led to confusion and a negative test for celiac disease. The real story though occurs after she receives her diagnosis. Jenny is from a very large family and what she did next had a profound effect on so many others. Jenny is now a volunteer with the Calgary Chapter of the CCA and it’s very clear, she is going to continue to make an impact on the lives of so many going forward. This week I’m thrilled to be speaking with Hayley Repton, producer of the short film – “Glutened”. The film is a fast-paced look at a young woman’s rollercoaster journey after diagnosis; how her life changes and how she comes to terms with the many aspects of her new lifestyle. Hayley let us in on some behind the scenes information, along with some of the rational for the many threads she pulls together to weave the story. I admit to Hayley that I cried at the end of the film, and when I’ve re-watched it, my emotions are still so close to the surface. This is an important film to watch, both for the diagnosed and those around them. Ep 153 Controversial Gluten Contamination Studies
I recently spoke with Dr. Jocelyn Silvester for Episode 149 of the podcast regarding the “Doggie Bag” Study which looked at the actual amounts of gluten that were contained in our seemingly gluten free diet. Dr. Silvester has gone on to look at some of the everyday ways we handle our food to identify, then quantify the risks of contamination from gluten containing ingredients. Her experiments included cooking gluten free pasta, sharing a knife with gluten foods, and using a toaster along with risks for children in the classroom. The results of her studies are surprising and somewhat concerning. The Canadian Celiac Association has looked at these findings and believes that more research needs to be done on this topic. No one is ready to change the recommendations for handling gluten free foods to avoid contamination with gluten, but these studies do give us pause to think. I was concerned about the interpretation of these results and decided to invite Ellen Bayens of theceliacscene.com onto the podcast to discuss how some of this information can relate to our day to day lives. Ep 152 Holiday Survival Guide 2020
It’s December and that means the arrival of the Holiday Survival Guide from the The Canadian Celiac Association. On this episode I speak with Melissa Secord, Executive Director of the CCA about the guide, including some special covid related content. It’s a year like no other, we will all have to be content with smaller gatherings, but that doesn’t mean we can’t make those times special with traditional baking and giving. Covid has taken a toll on a significant portion of our population, which we must remember and assist at this difficult time. One initiative of the CCA is a program to identify gluten free donations to foods banks, so they can be saved for those requiring gluten free. Ep 151 Gluten Free Flour Blends and How to Use Them
On this episode we talk again about gluten free baking. Specifically, we look at flour blends. Almost everyone who has baked gluten free will agree that one flour – rice flour, almond flour, oat flour, none of them can stand alone and always need to be blended with another grain or starch to get the taste, texture and mouthfeel in the final ingredient. Cinde Little, who online is known as the Everyday Gluten Free Gourmet has developed a guide to the different flours and suggestions for combinations to make a wide variety of baked goods. I also talk with Saima from a new company called Breadables. Saima has worked hard to develop a flour blend for roti, which is an Indian flatbread. I know from some of my previous podcast guests, and my own investigation and trials, that roti made gluten free was an elusive thing. Ellen Bayens is back with us for her monthly roundup of news from theceliacscene.com. We chat about a new study released from the Mayo Clinic regarding giving children antibiotics under the age of two and if that puts them at a greater risk for other diseases and conditions as they get older – celiac disease figures into this study. Some good news – a recent study finds those with celiac disease are not at greater risk of contracting Covid-19. This was very welcome news during this time of increasing cases. Ellen and I were pretty much both on the same page when it came to discussing the adoption of a gluten free diet by those without diagnosed celiac disease and now there is a study to dig deeper into this. Ep 149 The Doggie Bag Study has Surprising Results
It was a year and a half ago that I first heard about a new study, teased at a forum of high level business people and researchers put together by the Canadian Celiac Association. Two doctors hinted at tidbits of their findings when they looked at the actual amount of gluten in a gluten free diet. At that time, I spoke with Dr. Jocelyn Silvester, and she promised to speak again with me when the study had been properly submitted for publishing. This episode is that long awaited conversation. Is there gluten in the gluten free diet? The answer is yes. But the research study, performed in Manitoba, was able to tell us so much more. The study is referred to as the “Doggie Bag Study”, but it has a lengthy proper name – Determination of Gluten Grams Ingested and Excreted By Adults eating Gluten-free. Ep 148 Research Into a Unique Food Guide for Celiacs
On this episode I speak with a very enthusiastic researcher, Dr. Diana Mager, who is also a Registered Dietitian. Dr. Mager is working on a project developing a food guide for young people diagnosed with celiac disease. This resource would take into account the special requirements of growing children and youth on a gluten free diet. After working with families facing the diagnosis of a child, and requests from the celiac community, Dr. Mager has put together a team, and funding to develop the resources families need to cope in switching a child to a gluten free diet. This week I speak with Kerry Bennett of Care Bakery. Kerry has a fascinating story of how she found out she needed to eat gluten free, then became a chef, then specialized in developing recipes for gluten free breads and eventually opened a commercial bakery. This week we talk about a change in labelling from the FDC (US) regarding fermented as well as distilled foods. We talk about a breakthrough in agriculture that is producing ultra low gluten barley called “kebari”. Developing the grain is a challenge, but the next challenge is to have the grain designated gluten free. We talk about Scientists in Saskatchewan who have examined wheat grown over more than 100 years to debunk the myth that it’s the “new” wheat that is causing more digestive problems linked to gluten. Ellen and I are joined on the podcast by Cinde Little, The Everyday Gluten Free Gourmet to chat about her development of a one-on-one course to teach you all the practicalities of a gluten free lifestyle. Ellen brings us up to date on the latest Musings by Mia – a recurring article about living gluten free as a 20-something. Mia looks at eating gluten free at university and college. Ellen also mentions Mia’s recent article that includes a scone recipe, which I will be trying in the next few days. Ellen shares with us some exciting news about Portofino Bakery in Victoria. This week, I speak again to Melissa Secord, Executive Director of the Canadian Celiac Association about what’s going on at the national office. Melissa shares plans for the second installment of a national conference to be held virtually in November. We also talked about a familiar fundraiser going virtual, that may be a great way to get a local celiac community to participate from a distance. Currently McMaster University are finishing a study on covid19 and the celiac population in Canada – stayed tuned for more on that. Public toilets is a subject I never thought I would be talking about on the blog. The Covid-19 pandemic changed many things in our lives, and the closing of most toilets which had been available to the public was something I found troubling. Lezlie Lowe has looked at the many issues surrounding our access to public toilets in her book “No Place To Go”. Lezlie recognizes that different people have different needs when it comes to the availability of toilets and the plight of those of us with celiac disease is not lost on her. On this episode of the podcast I speak a Mother and Son who have collaborated on a book about the impact of a celiac diagnosis on a family. Ep 127 Global Incidence of Celiac Disease
James King was a past recipient of the James A. Campbell Memorial Research Award from the Canadian Celiac Association. His research involved a study of the many previous studies that have been done world-wide on the incidence of celiac disease. James discussed with me the method of his study along with some of the results. Ep 125 It's All About the (Gluten Free) Bread
On this episode I caught up with an old friend who had a gluten free bakery about 20 minutes out of town from my bakery, and we often chatted and supported each other. My bakery has been closed for a number of years now, and initially Rita closed hers as well. For quite some time, Rita has had a stall at our local farmer’s market here in Kingston on Sundays selling her baked goods. Over the stay at home Covid-19 times, the market has adapted in simple, but effective ways to allow Rita to continue to bake for her customers. I thought this was a good chance to talk to a respected commercial/home baker about baking bread. Seems everyone is dabbling in baking bread while they are off work. Gluten free bread is a completely different challenge. Once again this month, I have the pleasure of speaking with Ellen Bayens of theceliacscene.com to discuss some of the information and articles she brought to our attention lately. She presented a few research studies looking at links between celiac disease and Type I Diabetes, Inflammatory Bowel Disease, as well as the role some environmental chemicals might play in the incidence of CD in children. We discuss the difficult daily decisions faced by asymptomatic celiacs, who don’t suffer stomach issues when they ingest gluten, and how that adds another level to the disease. Ep 117 CCA Conference Goes Virtual in 2020
This has been a year when plans of all kinds have had to change and adapt to our current social distancing practices. The Canadian Celiac Association had planned a conference for the beginning of June in Regina, and the plans of attendees were well underway before the stay-at-home orders were invoked. The CCA has taken the progressive step of mounting the conference virtually, meaning anyone who registers can participate from their own home via their computer, ipad or even a phone. Registration has a suggested cost of $20, but if you are not comfortably able to contribute, you can still register. Also, you don’t have to be a CCA member.
