Ep 265 Basics of Cross Contamination with Selena DeVries

In the first of my Back to Basics Series, I speak with Registered Dietitian Selena DeVries about Cross Contamination. From the time we first hear about the gluten free diet, we try to absorb the concept of cross contamination and how to avoid it. Selena walks us through our kitchen setup, bakeware, pots and pans, and even shopping at a bulk food store. My big take away – Gluten Can’t Jump! You can find Selena on Instagram @celiac_dietitian. Ep 264 CCA Update with Melissa and Julie

Ep 264 CCA Update with Melissa and Julie

In preparation for Celiac Awareness Month in May, I thought it was a good time to find out what’s been happening rcently with Celiac Canada. The organization is celebrating its 50th birthday this year and along with events in May, there are lots of opportunities to learn and get involved. To raise awareness of economic issues and the under-diagnosis crisis, Melissa will be on Parliament Hill for a breakfast event on May 30th in an attempt to capture the attention of our Members of Parliament. Gluten free food fortification and the upcoming grocery rebate are all topics up for discussion. Good news has come through from the Province of Ontario that going forward the blood test for celiac disease will now be covered under provincial OHIP. Julie tells us about Webinar Wednesdays during May, and an opportunity to “Ask the Expert” at the Gluten Free Garage at the end of May in Toronto. Lots is going on during the month of May including light up events across Canada, along with meetings, meals and informal get togethers. To find out more you can go online to www.celiac.ca and look up events. Ep 263 April 2023 Roundup

Ep 263 April 2023 Roundup

It’s time for the roundup chat with Ellen Bayens of theceliacscene.com. May is Celiac Awareness Month and Ellen and I start things off with a call to help spread awareness. It can be as simple as a conversation with those around you, or you can attend an event that might be happening near you. You can find out more about Celiac Canada’s plans on their website www.celiac.ca. Ellen brings to our attention a study in Italy of school children to help identify more celiacs at a young age. The interesting thing here is that the initial testing is done with one drop of blood, then children who are positive go on for further testing. Sounds simple and hopefully this test can be used more widely in the future. Ellen brings us up to date on the current practice of diagnosing and managing patients with refractory celiac disease – a condition that does not respond completely to the gluten free diet. Covid-19 vaccines have been controversial, but what was understood is that the celiac population responded similarly to the overall population with the vaccine. A recent study showed that unvaccinated celiacs are more likely than the general unvaccinated population to be hospitalized and suffer more ill effects. Ellen made a discovery at Walmart! Walmart is selling the Schar brand of gluten free foods, but what Ellen found at her local store was a treasure trove of all gluten free Schar foods brought into Canada. Different stores carry different products, and may place then in different aisles, but if you look, you may be richly rewarded. During this month Ellen will oblige me by asking two questions on her social media – firstly, as a consumer would you like to see, in a grocery store, all the gluten free food together, or mixed in with the regular food in the separate aisles? And second, how do you feel about store brands of gluten free foods, cookies, pizzas etc., co-packed, marked gluten free, and with the store branding? Is this something you would purchase and support? Hopefully, you’ll weigh in on our two questions and Ellen and I can discuss the responses at the beginning of May. Ep 262 Cinde and Sue Talk GF Tapas

Ep 262 Cinde and Sue Talk GF Tapas

The conversation on this episode was, at first supposed to be a an opportunity for me to ask Cinde Little the Everyday Gluten Free Gourmet about her post regarding Spanish tapas. I will be travelling to Spain very soon, and it occurred to me that tapas are something I don’t know about, and for that reason will just avoid them. Reading Cinde’s post, I thought it was a good time to find out more about this local food and arm myself with information that would allow me to order tapas in a restaurant safely. I thought you might want to listen in as I get a lesson in making, ordering and eating tapas gluten free. Ep 261 GF Certification with BRCGS

Ep 261 GF Certification with BRCGS

When I was at the 50th Anniversary kickoff for Celiac Canada I spoke with the Technical Manager for the Gluten Free Certification with BRCGS. His name is Barry Meikle and I had so many questions. On Episode 176, I spoke with John Murthy from BRCGS in London, so it was appropriate to now speak with Barry to get the Canadian/North American take on Gluten Free Certification. We talk about how the program works and what assurances you can get from purchasing products with the CCA Gluten Free symbol. Barry mentioned the Product Finder on the CCA website, which is a listing of all products registered to carry the certification symbol. Ep 260 Cruising Gluten Free

I love to travel, and I love cruising. I am often asked about how to travel safely while eating gluten free - more often than not, my suggestion is to cruise. Deciding on a particular cruise does require a bit of research, and preparation, but in my experience cruising has been safe and exciting. My daughter Deanna recently came back from a cruise on a cruise line I was not familiar with. On this podcast she shares her experiences along with some practical advice on how to prepare and what to expect. On my blog I have included some photos of her menus and some of the dishes she enjoyed. https://www.acanadianceliacblog.com Here is the link to the Royal Caribbean Blog with current information on their gluten free dining experience. https://www.royalcaribbeanblog.com/2023/03/06/royal-caribbean-gluten-free-dining Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 259 Gluten Free Baker on Wheels

This is a fun podcast for me. I was introduced to Tanja Blondin by Ellen Bayens of theceliacscene.com. Tanja and I have much in common, both she and her daughter are celiac and Tanja loves to bake – so much so that after working in restaurants and bakeries for many years, she now has a gluten free baking business. In her vendor trailer, Tanja frequents farmers markets, vendor shows and other outdoor food events to sell her baking. Ellen did a nice piece on her with some great food pictures that you can find here - bit.ly/Bglutenfreevictoria You can follow Tanja on Instagram @Bglutenfreevictoria or access her website if you’re local and want to order ahead at https://bglutenfreevictoria.square.site/ Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

I’m ready for my roundup chat with Ellen Bayens of theceliacscene.com. Ellen and I talk about current food recalls, as well, we take a deep dive into a few topics concerning gluten free oats, including oat milk. Ellen points out a great Instagram post from Selena Devries regarding over the counter cold and flu medications that you might be questioning for gluten. Together, we wade into the complicated and controversial topic of gluten reduced beer. This is something everyone on a gluten free diet should know about. Ep 257 Gluten Free Downunder

Ep 257 Gluten Free Downunder

January was very exciting for me – I visited family in Australia! I had an amazing time, my hosts were wonderful and worked hard to provide me with the full Australian experience.  As a celiac, I was very interested in the gluten free foods available in Australia – Wow! was I blown away by the multitude of options, the variety and the quality. In this episode of the podcast, Ellen Bayens of theceliacscene.com turns the tables and interviews me about my trip, how I ate and if I brought any goodies home with me. Ellen has relationship with the company that produces Corn Thins for the worldwide market and they are located in Australia. Ellen was kind enough to set up a conversation for me with her contact at Corn Thins to discuss gluten free food production in Australia. You get to listen as Ellen and I find out some unexpected good news about what it means to call a product gluten free in Australia. I don’t take many photos of my everyday life, but I do photograph food, and while in Australia I took some pictures that you have to see to understand and believe. Follow along with the podcast and refer to the photos on my blog at acanadianceliacblog.com. PS – I threw in the photos of feeding kangaroos and cuddling a baby wombat. Ep 255 February 2023 Roundup

Ep 255 February 2023 Roundup

Time to catch up with Ellen Bayens of theceliacscene.com. Ellen and I talk about a study that looks at celiac children with persistent symptoms after one year of being established on the gluten free diet. As well Ellen introduces a study in the form of online surveys to be taken by 8 – 16 year old celiac patients, in an effort to improve recommendations for celiac youth. Oats have been in the news lately and Ellen and I look at a study recognizing that some celiacs are not able to tolerate even pure oats. More investigation needs to be done on the cause of a reaction to pure oats, but this study hopefully is the first step to solving this issue. Ellen was able to bring us the story of a family suffering through the war in Ukraine with a sick child suspected of having celiac disease. The family is now in Boston, with the help of The National Celiac Association in Massachusetts. This prompted Ellen to mention a company she’s worked with called TOTAL PREPARE that makes freeze dried meals which can be used in case of an emergency, when camping, or when you’re struggling otherwise for basic necessities, as are parts of Ukraine currently. Ellen directs us to the company’s gluten free webpage -  https://totalprepare.ca/shop/food/?swoof=1&pa_dietary-needs=gluten-free&really_curr_tax=770-product_cat&utm_source=cs&utm_medium=cs&utm_campaign=celiac_scene&utm_id=csgf Ellen and I recapped my recent series of podcasts about asymptomatic celiacs, including my opinion on what I learned from the conversations. Ellen was happy to tell us that the Noodlebox restaurant chain from BC has now opened a location in Ontario, west of Toronto. As well she was able to share some of the lengths that MeeT Vegan & Vegetarian restaurants go to in order to offer gluten free on their menu. Ep 253 Jill's Asypmtomatic Journey

Ep 253 Jill's Asypmtomatic Journey

During the month of January, I’m presenting stories of individuals who consider themselves asymptomatic with Celiac Disease. On this episode I speak with Jill, who is one of those rare individuals who is biopsy confirmed with celiac disease but has no digestive issues when eating gluten. Listening to Jill I began to understand the difficulty she encounters when making food and lifestyle choices. Those of us with celiac disease know we must eat a gluten free diet, and if we don’t, or aren’t careful, we will suffer noticeable and often life disrupting discomfort. Jill, on the other hand has no digestive, or other issues if she eats gluten. Some may consider this a best-case scenario, if they slip up, or if they accidentally ingest gluten, they won’t even notice. However, this dream scenario comes with its own negative side. Jill struggles to commit to the diet on a long-term basis, even though she knows she should. Jill enjoys going to restaurants and, like the rest of us find requesting gluten free to be a hassle, but unlike the rest of us, she won’t suffer from being glutened, at least not in the short term. I try to discuss the issues without making Jill feel guilty for slipping from gluten free, and we come up with some strategies going forward to make the diet something she can make a long-term commitment to. Ep 252 Asymptomatic Kids and Parents

During the month of January, I’m presenting stories of individuals who consider themselves asymptomatic with Celiac Disease. On this episode I speak with two Moms. The first family is struggling to arrive at a diagnosis for their child. I speak with the Mom both prior to and after the appointment with a specialist. The goal here is to formulate a plan to move forward while a diagnosis is being arrived at. The second Mom has unconventional symptoms, and also has a son who is, for the most part asymptomatic. I speak with both of them, to understand how they cope gluten free day to day. During the month of January, I’m presenting stories of individuals who consider themselves asymptomatic with Celiac Disease. On this episode I speak with Mariya and Sacha. We chat about their stories, how they cope day to day and some of the unique issues around having celiac disease without the common severe digestive symptoms. My guests this month represent a broad range of symptoms, most not falling under digestive. I must admit to sometimes wishing I didn’t suffer the digestive effects of eating gluten, but as you’ll hear from my guests this month, being asymptomatic comes with other challenges. Ep 250 January 2023 Roundup

It feels like a bit of a milestone Episode 250, and it’s most fitting that I’m speaking with Ellen Bayens of www.theceliacscene.com about news and our views that have come up during the past month, getting us all ready to take on 2023. Ellen and I chat about resistant starches and I learn that my love of leftovers is actually a good thing.  We also look into the CCA Position Statement on Corn products and how it should help us in making safe food choices. We also talk about some of my recent podcasts including a bonus episode on the Gluten Free Weigh In Podcast where each of my co-hosts gives their take on New Year’s Resolutions. Sidenote – Aaron has a very educated view on behaviour changes that goes way beyond a once-a-year decision.  My podcasts for January will focus on people who consider themselves asymptomatic, or at least differently symptomatic.  I’ll be travelling in January, so hopefully this series of podcasts will come out weekly, but at this point my schedule is somewhat unknown, but I will give it my best attempt. Ep 249 Advocating for the Undiagnosed

Ep 249 Advocating for the Undiagnosed

I was fortunate to talk with many different people who consider themselves asymptomatic with celiac disease for a series of podcasts, uncoming in January. On this podcast, Peggy and her son are not asymptomatic, quite the opposite, their symptoms are severe, but they lack a diagnosis. I’ve run across many families in this situation and it’s difficult to give advice, because knowing what I know about diagnosing and living with celiac disease, I’m not sure what path I would take. Often these situations involve young children, who, for a variety of reasons have not had a proper diagnosis, but decisions must be made to keep they safe and healthy. What I’ve learned from speaking with so many about their diagnosis stories is that very few are straight forward and most have repercussions deep into the family dynamic. If you would like more information on many of the aspects of celiac disease that I speak to Peggy about, spend some time on the website of the Canadian Celiac Association www.celiac.ca. I encourage you to print off whatever resources might help you to speak to your doctor, family members, school or friends about what you need to be healthy. Ep 248 All-Inclusive Gluten Free Travel Explained

Ep 248 All-Inclusive Gluten Free Travel Explained

I always get excited when I can have my adult daughter, Deanna, on the podcast with me to discuss shared experiences and how she may do things a bit differently from me. This conversation is about booking all-inclusive travel, something that is a hot topic as the weather gets cold. Deanna and I have been on trips together, as well as separately and we both have thoughts and tips about researching, booking and going on an all-inclusive holiday. I was recently asked if an all-inclusive could be a safe choice for a vacation for someone eating gluten free. My answer is yes, but you have some extra work to do, that others won’t have. Here is a link to the restaurant cards I spoke about.  As well, there’s more information on this site that might answer questions for more adventurous travellers. https://www.celiactravel.com/cards/ Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 247 December 2022 Roundup

Ep 247 December 2022 Roundup

It’s the beginning of the month and I get to chat with Ellen Bayens of https://theceliacscene.com/  about the articles she has brought to our attention over the past month.  We discuss a study of the issues involved in screening for other autoimmune disorders when patients have Celiac Disease, and screening for Celiac Disease in patients with other autoimmune conditions.  We also discuss Refractory Celiac Disease which is CD that doesn’t resolve properly on a gluten free diet.  The gluten free diet is difficult to learn and there is a new teaching technique to empower celiacs to use new tools to help them recover. Ellen and I have a lively discussion about some recent podcasts I’ve done including Episode 246 which is a discussion with larger than life personality Mairlyn Smith about fibre in a gluten free diet, as well as a refreshing (and comical) look at how fibre helps the body. Ellen has had a relationship with Stella’s Perogies which are now available in Eastern Canada at Sobeys and Walmart.  Perogies are popular with many people during the holiday season.  I also mentioned a great memory of making perogies at my bakery with members of our local celiac chapter a number of years ago.  You can find the recipe on my website www.suesglutenfreebaking.com , under the recipe tab, show #14 https://www.suesglutenfreebaking.com/pasta-gnocchi-perogies NEWS FROM THE CELIAC SCENE Case for Screening for Autoimmune Disorders in Patients With Celiac Disease • Managing Refractory (Non-Resolving) Celiac Disease • Teaching Celiacs that they CAN Manage the Gluten-Free Diet is Key to their Recovery A CANADIAN CELIAC PODCAST Asympotomatic Celiacs • Freshly Milled Gluten-Free Flours from Millstone Organics • Celiac Scene News Round Up GLUTEN-FREE WEIGH IN PODCAST Losing Too Much, Too Fast Fast • Obesity & Malnutrition Can Co-Exist GLUTEN-FREE PRODUCTS & SERVICES Stella's Gluten-Free Perogies Now at Sobey's in Ontario & Atlantic Canada   Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 246 Mairlyn Smith Talks Fibre and Gluten Free

Ep 246 Mairlyn Smith Talks Fibre and Gluten Free

This episode has been a long time in the works, since before I started the podcast. I have the pleasure on this episode to have a conversation with Mairlyn Smith, who is a Canadian personality, she is a comedian, an actress, and a Home Economist. As well Mairlyn is a recurring guest expert on Cityline and Breakfast Television. Her current book is called “Peace, Love & Fibre”. I met Mairlyn in the fall of 2017 and it was her encouragement that made me decide to start this podcast. Mairlyn is known in Canada as the Queen of Fibre and in her own amusing and witty way, she answers all my questions about fibre and the gluten free diet. I am fortunate that through the podcast I have met many inspiring individuals, and it all started with inspiration from Mairlyn.  Thanks for that! You can follow Mairlyn on Instagram and Twitter. You too can enjoy sharing a cup of tea with her most mornings on Instagram @mairlynsmith. Ep 245 Gluten Free Grains and Millstone Organics

Ep 245 Gluten Free Grains and Millstone Organics

This episode begins with a short conversation with Ellen Bayens of theceliacscene.com who gives an introduction for my guest, Laurie Kelly of Millstone Farm on Vancouver Island. Millstone farm has some small animal holdings, but is best known for on-site milling of certified gluten free organic grains. Laurie explains how she and her husband made the leap into grain milling, and why gluten free. Also, Laurie has organized the donation of 6,000 gluten free sugar cookies to local charities, including the Mustard Seed Society in Victoria – the catch is, she’s asking members of the community to come to the farm to decorate the cookies. Currently, the November 20th date is fully booked, but they are looking to fill some spots on December 11th. As well, Laurie has a charming story of how her woollen dryer balls caught the eye of some celebrities, and how she was able to mingle with them. The specialized containers Laurie spoke about were Miron Glass. I’m excited to introduce you to a program from the Canadian Celiac Association directed towards those individuals newly diagnosed, their family and caregivers, along with others needing a refresher on the gluten free diet. Nicole Byrom who is a Registered Dietitian working with the CCA, is back on the podcast to tell us about the Newly Diagnosed Pathway. This program is a curated collection of emails that contain different resources and are sent on a periodic basis to educate and inform those who have signed on to the pathway. Nicole mentioned the CCA website, www.celiac.ca; the information email address, [email protected]; along with the helpline phone number (905) 507-6208.  When you open the website, you will also be prompted to fill out the State of Celiac Disease in Canada Health Survey, as well you can find the Newly Diagnosed Pathway under the What’s New tab https://www.celiac.ca/newlydiagnosed/. Ep 242 Celiac with a Man Brain

Ep 242 Celiac with a Man Brain

On this episode I’m speaking with a co-host from my other podcast, Gluten Free Weigh In. Aaron has been diagnosed for about one year and I wanted to speak to him about being a man with celiac disease. Overwhelmingly, most celiacs I’ve known are women. We talk about why more men aren’t seeking diagnosis, as well as how most of the resources available are directed towards women. Aaron is in a unique position to discuss this subject matter with me, not only because he’s a man, but he is also a behaviourist, with a Master’s degree in Behaviour Education. Aaron is very animated and honest and will almost certainly challenge some of your perceptions of living with celiac disease.  Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 241 DH and Gluten Free in a Foreign Land

Ep 241 DH and Gluten Free in a Foreign Land

On this episode I speak with Derradji Zaarer who lives in Algeria.  Derradji has Dermatitis Herpetiformis or as we often refer to it as “DH”.  DH is essentially celiac disease of the skin.  Diagnosis for DH is often straightforward, as the tiny blisters are usually in symmetric distribution, meaning that if you have them on your left elbow, you will also have them on your right elbow, or wherever else they appear. Derradji faces many challenges with his rare condition including the availability of the medication normally prescribed.  The limited availability of gluten free food is also something that makes dealing with DH in Algeria very difficult.  With all he is facing, Derradji is doing his best to connect with other DH patients as well as celiac patients both in his country and in other places.  He has found the CCA a reliable website for medical information about DH and the gluten free diet.  If you would like to reach out to him, his email is [email protected]. Ep 239 October 2022 Roundup

Ep 239 October 2022 Roundup

This episode is my recurring opportunity to weigh in on information Ellen Bayens published on theceliacscene.com during the past month.  The challenge of finding safe french fries in restaurants is one that every celiac encounters, so Ellen and I both give our take on the subject.  We talk about the recent recall for M&M Foods along with their gluten free policies.  Island Farms, a dairy on Vancouver Island has recently decided to NO LONGER make their ice creams gluten free, so we look at the impact on the community.  An informative long-term study out of Norway looks at detecting celiac disease in the general population over time.  Arsenic, mercury and lead are all undesirable in our food, and the gluten free diet poses a greater risk of these substances showing up, but there are steps you can take.  We are all familiar with celiac disease, but do you know what makes either a wheat allergy, or non-celiac gluten sensitivity different? Ep 238 Sue Goes Back to Camp Celiac

Two weeks in August was the culmination of a many hours of work by dedicated volunteers to make Camp Celiac 2022 happen.  I was a member of the Menu Committee and along with others we worked and re-worked a menu for the camp that would be exciting for celiac and non-celiac kids alike.  The force behind camp celiac is Carmen, a member of the Ottawa Chapter of the Canadian Celiac Association.  Carmen spent the most time of the two weeks at camp.  I, and a few others were there for designated days.  Once the hard work of the menu was completed, we reached out to gluten free food partners to supply some of the specialty food.  Our food partners were amazing with their donations, that allowed us to present meals that were enthusiastically enjoyed by all.  For more information on Camp Celiac you can go to their website https://www.campceliac.ca/  You can also join the Camp Celiac facebook group.  If you’d like more information on volunteering for next year, or if you are interested in what it takes to start a camp for celiac kids near you, please email me and we can start a conversation – [email protected]. Ep 235 Celiac Students and International Exchange Experiences

During my recent conversation with Ellen Bayens of theceliacscene.com, she introduced me to Karen Joseph who works for ASSE, an international student exchange program based in the US.  One of Karen’s responsibilities is to find host families for incoming students who require a special diet for health needs.  Karen is uniquely qualified for this task as she is the mother of a now adult son with Type I Diabetes and Celiac Disease.  She understands the gluten free diet and spoke to me of the importance of finding host families who are prepared to support a student with celiac disease.  Karen has lots of stories of the students she has placed and how they made the gluten free diet work for them in a new country, hosted by a new family.  If you are interested in hosting a student from abroad, or have a student at home who may be interested in studying abroad, you can find out more information at – Direct contact:  [email protected] In Canada:  asse.com/contact-us United States:  com/contact_by_email_phone Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 234 September 2022 Roundup

The beginning of September means I have the opportunity to chat with my friend Ellen Bayens of theceliacscene.com.  On this episode we talk about strategies for parents and teachers to be on the same page about the celiac student and their needs during the school year.  Ellen has some great suggestions.  We also talk briefly about a student exchange program and the person in charge of the special diet requirements.  I hope to speak with her about this interesting topic on a separate podcast very soon.  In science news, researchers have come up with a tool to help doctors determine the risk of celiac disease to some of their youngest patients, and it turns out the gut microbiome has lots more to tell us, and this time it’s about the very specific differences in the small intestine, depending on where the same of the microbiome was taken from.  These advances in science will hopefully mesh together to allow for a better diagnosis rate in the future. Ellen and I talk about some of my recent podcasts including the story telling author Ann Campanella in her book Celiac Mom (https://bit.ly/Ep233CeliacMom).  Ellen also comes clean about her interest in my co-host Arron’s ongoing journey after bariatric surgery.  Seasons are changing and Ellen fills us in on where the food trucks go, as the weather gets colder. Ep 233 Celiac Mom Author Ann Campanella

I’m thrilled to speak with Ann Campanella about her book Celiac Mom.  Ann’s daughter was diagnosed at the age of 5 many years ago.  Ann reflects on her struggles as a parent of a celiac.  Her flair for story telling is often vivid and pulls at our heart strings.  Being a parent of a celiac child, we often find ourselves very protective.  This approach can take many forms, so each family’s story is different.  Ann draws us in with the detail that I’m sure her daughter has long since forgotten, but stays with parents as they navigate these troubled waters.  Ann talks about dealing with schools, choices of friends, and the good and bad about family vacations.  You can find out more about Ann and order her book in either digital or paper form on her website or on Amazon.  Ann is an accomplished author and shares more about her other works on her website as well.  Links are also on her website to her various social media accounts. http://www.anncampanella.com/ Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

On this episode I speak with Ellen Bayens about articles, topics and science that has been published over the past month about celiac disease and the gluten free diet.  We talk about why a new drug treatment study was abandoned in the Stage 3 phase, as well as research into how science will eventually tackle and treat celiac disease.  Artificial intelligence is being prepared to help doctors diagnose celiac disease - with 300 symptoms and normally many years of testing prior to diagnosis, this new tool may change the diagnosis landscape.  Mental health is in the news these days, with the stress of covid and the economy, and a recent study has looked at the rates of anxiety, depression and ADHD in the celiac population, particularly in youth.  Dr. Diane Mager of the University of Alberta is heading a team researching the specific dietary needs of children newly diagnosed with celiac disease.  They are reaching out to the community for participation in two studies, one for children and families and the other to find family friendly recipes to use as part of their resource package.  Here are the links to find out more information -  https://conquer-studies.weebly.com/ and redcap.link/GFcookbook. Ellen had the tale of two restaurants, one that had gluten free items on their menu, but they are not actually gluten free and safe for celiacs, and the other restaurant that is going to great lengths to ensure their many gluten free offerings are safe for us. Selena DeVries is back with her Instagram post about 18 snack bars that are gluten free and safe to eat. Ellen has highlighted some of my recent podcasts including my chat with Christine Nesbitt as well as the deep dive Nicole Byrom and I took into understanding everything on a food label that wasn’t the ingredients. Ep 229 Enhancing Food Choices for Celiac Kids

Ep 229 Enhancing Food Choices for Celiac Kids

As a follow-up to Episode 148 I speak again with Dr. Diana Mager from the University of Alberta as she and her team have formulated a gluten free food guide for children that more meets their specific needs.  Currently they are recruiting families of newly diagnosed children (less than one year, and between the ages of 5 and 18) to participate in a study to look at the effects of the enhanced food guide.  Participants will be given one-on-one education and other resources regarding the nutritional needs of children with celiac disease and how those needs differ from the general population.  Here’s the link to find out more - https://conquer-studies.weebly.com/ As well, Dr. Mager’s group is also conducting a study to gather family friendly recipes which will make up one of the resources to accompany the food guide.  If you have a recipe that might be suitable, you are asked to open the link and complete the survey.  You can find the link at redcap.link/GFcookbook.  You can also contact Dr. Mager directly at [email protected]. You will hear Dr. Mager mention the Conquer studies. Conquer stands for – Celiac disease Outcomes in Nutrition, Quality of life, and Emerging Research. Ep 228 Hiding In Plain Sight on a Package Label

Ep 228 Hiding In Plain Sight on a Package Label

It’s time for a deep dive into everything we can learn about our food from the packaging and labelling, that isn’t just the ingredients.  I speak with Nicole Byrom, RD for the Canadian Celiac Association about how to read a nutrition facts label, including serving sizes and vitamin sources.  Nicole explains the mystery around best before dates and when not to buy or use a dented tin.  Sometimes we can find a gluten free claim as well as a may contains – seems like a contradiction, but Nicole explains what we are actually looking for in the packaging claims, as well as which ones don’t pertain to our gluten free diet.  Everything you didn’t know you that you didn’t know about product labels. Ep 227 Christine Nesbitt Skating in Circles with Celiac Disease

Ever since I sat in on a virtual presentation from the Canadian Celiac Association featuring Christine Nesbitt, I’ve been anxious to have a longer conversation with her.  Christine was an elite speed skater who won numerous medals for Canada over a very distinguished career.  After many years of suffering unexplained digestive issues, Christine was diagnosed with celiac disease.  She explains how her diagnosis effected her skating, her travelling and being a part of a very competitive team.  Christine’s story is rich with reminders that celiac disease can be controlled and shouldn’t stop us from accomplishing anything we’re willing to put our best effort towards. Ep 226 Gluten Free Garage 2022

Ep 226 Gluten Free Garage 2022

On this episode I’m at the Gluten Free Garage, which is large food show in Toronto.  I’ve attended the show previously with the podcast, but this year, I was helping at the booth for the Canadian Celiac Association.  The CCA booth was a place for attendees to drop off gluten free food donations.  This is something that was done in previous years by Jessica Danford, but she wasn’t able to be at the event this year, and the CCA was happy to help.  If you would like more information on gluten free food donation, visit the CCA’s website www.celiac.ca and search Save Me For Gluten Free.  I took the opportunity at the food show to speak with some of the interesting people I met. I spoke with Carmen Luongo from Shar Gluten Free and he was able to let us in on some new upcoming products.  I highly recommend their Twin Bar – each package contains three packs of two bars. I met Robyn Harrison of Robyn’s Gluten Free Baking Courses.  You can find out more about Robyn at www.glutenfreebakingcourses.com. Gaston spoke with me about celiac research being done at McMaster University.  You can find out more and sign up for their research newsletter at www.mcmasterceliacclinic.ca/research. It was great to see Josh from the Bakery at St. Anne’s Spa at the show.  I’ve been to the bakery in the past, and everything I tried there was terrific.  You can find out more about the spa at www.steannes.com. Terry from the restaurant Riz was excited to tell me about Riz moving to a new location with an expanded gluten free menu.  The new location will be opening in the next few weeks.  Their website is www.rizglutenfree.com. Gluten Free Fest is a Food Show being put on by The Gluten Free Collective in Kitchener Waterloo on September 18th.  You can find out more at www.glutenfreefest.ca. I met Vanessa Sarraino who has just released a new cookbook called Celiac Sweeties.  You can find out more at www.vanessacarraino.com or to order the book, you can call her directly at 647 654-0023. It was nice for me to catch up with Derek from Camp Celiac.  Last year, I helped out with the food and menu for camp and I’m looking forward to the kids coming again this year.  Space for this special camp is filling up fast.  You can find out more at www.celiaccamp.ca. Ep 225 June 2022 Roundup

Ep 225 June 2022 Roundup

I speak on this podcast with Ellen Bayens of theceliacscene.com about the articles, studies, and interesting stories she has presented to us this past month.  We spoke about a family who had one child suffering with IBD and a second diagnosed with IBS.  This conversation became about the differences between the two conditions and how the diagnosis and treatment of IBS and IBD have advanced substantially over the past decade.  On the subject of children, we looked at the benefits of having support systems within the celiac community not only for celiac children, but also for the parents of celiac children.  This support is important, soon after diagnosis, as well as on an ongoing basis.  A recent study to find a biomarker that would be able to measure how children were responding to a gluten free diet led Ellen and I to a discussion of using or mis-using TTG numbers to indicate healing and the adherence to the gluten free diet. Ellen put in a special word for Michelle, of Michelle’s GF Kitchen as during May she was working with the Edmonton Chapter to help with ideas for some gluten free meals. As always, Ellen and I speak about food, and on this occasion, it was gluten free fish and chips and why they cause such a stir in our community. I received an email from a listener of the podcast who gave me more current information about a labelling issue I got wrong on a previous podcast.  We all make mistakes, but if we can come away with the correct information, we’re all better for it. Ep 224 Iron Deficiency and Celiac Disease

Ep 224 Iron Deficiency and Celiac Disease

Iron deficiency or anemia is more complicated that I realized.  The Canadian Celiac Association recently presented a webinar on celiac disease and iron deficiency.  Dr. Frances Scully gave us information on the treatment of iron deficiency, along with other medical and scientific information.  Nicole Byrom, Registered Dietitian with the CCA spoke about how iron deficiency related to celiac disease and its symptoms, as well as changes we can make to our diets to increase our iron intake.  We also heard from Malorie Otton, who was diagnosed as a young adult with iron deficiency, that led to other complications and was her main symptom prior to her celiac diagnosis.  Nicole and Malorie join me on the podcast to explore more about iron deficiency and celiac disease. Ep 223 IBS and Celiac Disease

Ep 223 IBS and Celiac Disease

I was able to attend the second webinar presented by the CCA during the month of May, Celiac Awareness Month. The subject of this webinar was IBS and Celiac Disease. There were two very engaging speakers, and I had the privilege of speaking with both of them for this podcast. Meghan Donnelly is a Registered Dietician who works for Dr. Schar, as Senior Manager of Nutrition Services. We know the company as Schar gluten free.  Megan works with individuals who could benefit from a specialized diet.  She has worked with many patients who are celiac, as well as those who have IBS. She explains the low FODMAP diet, which is meant as a resource to identify specific foods that may be causing IBS symptoms in the gut. Megan explains the process of working through the diet as well as other forms of dietary treatment. Megan has some great slides in the webinar. The link is below. Dr. Maria Ines Pinto-Sanchez is the Lead at the Adult Celiac Clinic at McMaster University’s Farncombe Digestive Disease Centre. Dr. Pinto-Sanchez gave a great description of both the similarities and differences in both the presentation, testing and treatment of IBS and Celiac Disease. I speak to her about the patient journey when presenting with symptoms that could be IBS or Celiac. She very well defines the differences of how the gut is affected in both conditions. There are some great slides and charts in the webinar presentation that illustrate these differences. Also, Dr. Pinto-Sanchez would like to encourage everyone to fill in the international survey about covid and vaccines. You can find the survey at https://bit.ly/redcapCovid19VaccineSurvey. Best to have your vaccine certificates handy, as the survey is collecting that information as part of the survey. Ep 222 Neurology and Celiac Disease

Ep 222 Neurology and Celiac Disease

The CCA presented a webinar the first month of May, Celiac Awareness Month, about Neurology and Celiac Disease.  Nicole Byrom introduced the two guests for the webinar, and now, I have been able to record a podcast with both of them.  I first speak with Sonia Jones, who was also featured in an article in the Canadian Celiac Magazine. Here’s the link – www.celiac.ca/wp-content/uploads/2022/05/CCA-May-Magazine-1-May-2022.pdf Sonia’s story is one of a very quick onset of neurological symptoms, followed by a prolonged journey to diagnosis. With all the tests Sonia was given, she’s confident she’s the million-dollar patient. I then speak with Dr. Ian Croall. Dr. Croall is a Research Fellow at the University of Sheffield in England. He is not a medical doctor seeing patients, but during the course of his research, he has studied the brains of many people with celiac disease, gluten intolerance, and gluten ataxia. You can find out more about his studies by watching the webinar. I speak to Dr. Croall about the impacts of his research on other celiacs and on those yet to be diagnosed. Ep 220 May 2022 Roundup

Ep 220 May 2022 Roundup

It’s time again to chat with Ellen Bayens of theceliacscene.com. Ellen brings us great articles and tidbits about celiac disease and the gluten free diet all month long and this is our opportunity to discuss.  First, we talk about an article that tries to define the differences between food allergies, intolerances and sensitivities – it’s a big and somewhat confusing job. Easiest to note that Celiac is none of the above, but many of us have an allergy, intolerance or sensitivity in addition to celiac. Have you ever wondered what xanthan gum is exactly?  I had not, until Ellen raised the topic. You might be surprised at what you learn.  Recently, Health Canada re-vamped their sign up for food and other recalls. Ellen gives us a summary of the changes and how the new process is so much easier. Ellen highlights the Tuesday questions answered by Selena DeVries RD on Instagram. Her website is Healthbean Nutrition and you can find her Instagram @celiac_dietitian. We talk about what makes the Honeycomb app unique.  This is of special interest to those who have additional food allergies, or those who want to know exactly what to order at a particular restaurant to be safe. I have a great story for Ellen that follows up from a discussion we had about a foreign celiac student staying with a family in Victoria. May is Celiac Awareness Month. Ep 219 Stretching Your Gluten Free Food Dollar

Ep 219 Stretching Your Gluten Free Food Dollar

I’ve been working on a bit of theme lately looking into different aspects of food security as they relate to those on a gluten free diet.  On this episode I speak with Cinde Little the Everyday Gluten Free Gourmet.  Cinde has a tremendous website with lots of great ideas for main dishes, side dishes, salads and desserts.  The photos on the website make everything look delicious. Cinde talks us through some of the strategies she uses to save on meats and vegetables.  Planning seems to be the key.  Planning also includes eating foods when they are in season.  This sounds logical, but we often have to think ahead to do that.  We also talk about how to take an inexpensive pasta meal and make it special with some simple additions.  Many of us are not very adventurous when it comes to blending ingredients and tastes.  Maybe that comes from trying to keep our diet simple to make sure it’s gluten free.  Cinde gives us lots of ideas to switch things up and make inexpensive meals more exciting.  Cinde has become known for her online cooking classes that not only introduce you to a few new recipes, but take you through the process to give you more confidence cooking gluten free.  You can find Cinde online at https://everydayglutenfreegourmet.ca/ Instagram @ everyday.gf.gourmet/ Twitter @ littlecinde Facebook @ everydayglutenfreegourmet Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 218 Update on Food Banks and Gluten Free

Ep 218 Update on Food Banks and Gluten Free

The topic of Food Security is one that I speak about often with others in leadership roles in Canada’s gluten free community.  I thought I’d bring some of those conversations to the podcast.  First, I speak with Jessica Danford who has devoted a great deal of time and energy into getting gluten free food into the hands of those who need it, but are not able to afford it.  Jessica explains how to work with food banks and some of the complications they might be facing.  Jess was recently featured as an author in the book “She Moves Mountains”, which can be purchased at most book sellers.  You can also connect with Jess on Instagram @Jessicadanford.  I also talk about Bev Ruffo, who is from the Hamilton area.  There is no longer a CCA chapter in Hamilton, but Bev still keeps in touch with some of her celiac friends and they decided to get involved with gluten free food collection.  They even appeared at the recent Gluten Free Goodness Expo to accept food donations and have attendees sign a petition for the CCA – well done! I round out this episode with a discussion about the extraordinary efforts being made by the Manitoba Chapter of the CCA.  The President of the Chapter, Christa Dubesky, tells me how their group got involved with a food bank umbrella organization to prepare hampers for the gluten free clients.  Not only did they prepare hampers, they took on the job of getting donations, for most of the food.  If you would like to help out their efforts you can leave a message at their chapter office at (204) 772-6979 or refer to their website http://www.manitobaceliac.com/ and follow the donations link. I’m looking forward to attending the Gluten Free Garage in Toronto on May 29th, where Jessica and I will be at the CCA tent to accept food donations.  If you’ll be in Toronto at that time, we’d love to have you show up.  You can find out more at https://glutenfreegarage.ca/ You can find out more about the CCA Save Me For Gluten Free Program at https://www.celiac.ca/get-involved/savemeforglutenfree/   Sue’s Websites and Social Media – Podcast https://acanadianceliacpodcast.libsyn.com Podcast Blog – https://www.acanadianceliacblog.com Email – [email protected] Celiac Kid Stuff – https://www.celiackidstuff.com Baking Website – https://www.suesglutenfreebaking.com Instagram - @suesgfbaking YouTube - https://www.youtube.com/playlist?list=PLUVGfpD4eJwwSc_YjkGagza06yYe3ApzL Email – [email protected] Other Podcast – Gluten Free Weigh In – https://glutenfreeweighin.libsyn.com

Ep 217 The Responsibilities of Gluten Free Food Producers

Ep 217 The Responsibilities of Gluten Free Food Producers

Ellen Bayens of The Celiac Scene.com is back for a lively and informative discussion of the regulations which form the basis of the obligations and responsibilities of food producers, and specifically gluten free food producers.  Have you wondered why some products in a grocery bakery don’t need ingredient and nutrition labels and some do?  What is the regulation concerning labelling foods being sold at a farmer’s market, or a coffee shop?  When labels are required, we need to see more than just the ingredients.  Ellen and I help you navigate the regulations around what food producers, restaurants and coffee shops must be able to tell you about the food you buy. If you have a concern in regard to a restaurant, call that CFIA (Canada Food Inspection Agency) at 1-800-442-2342 and they will refer the call to the closest office of the CFIA and have them contact you. Ep 216 April 2022 Roundup

On this episode I speak with Ellen Bayens of The Celiac Scene.com about things that have been of interest in the celiac and gluten free world over the past month.  Ellen and I have a discussion about bloating – something that was never really a symptom for me, but as a symptom it should be talked about more.  Ellen tells us of the recent product recall from Cavendish Farms, along with details of the new non-gluten status of Earth’s Own oat beverage.  The website to sign up for product recalls with the Canadian Food Inspection Agency is - https://inspection.canada.ca/english/util/listserv/listsube.shtml.  We both get wrapped up in a recent episode of Dr. Phil where he talks to a woman who is so fearful of ingesting gluten that she is changing everything to accommodate her fears.  Dr. Phil gives us some valid information on how to evaluate a fear like this.  Ellen found the evaluation criteria transposed well to help her in another area of her life. Ellen gives me her thoughts on a few of my recent podcast conversations including Dr. Melissa Ing, The Allergy Chef and Adam, who is Deanna’s boyfriend.  We also talk about how honest Aaron is on my Gluten Free Weigh In podcast after he was recently “glutened”. We round out our discussion with Selena’s 15 Gluten Free Finds from Costco and my review of a recent online cooking class I participated in with Cinde, the Everyday Gluten Free Gourmet.
