AAB: 037: Ukrainian Golden Ale

The Ukrainian Golden ale is a newish beer style from the Donetsk region of Ukraine, a region you have heard about in the news. Its creator, Dmytro Nekrasov, fled his home to the capital of Kyiv and started brewing the golden ale there where it has become a popular addition to craft brewing. But what is the golden ale and what makes it special to Ukraine? How is beer tied to the location of where it is brewed? We talk to Ukrainian beer sommelier Lana Svitankova about her mission to spread the style throughout the world and with Cameron Compton, who owns Chicago based Midwest Coast Brewing and who brews Ukrainian Golden ale at his brewery, which raises money for the war effort.Guests: Lana Svitankova is a Ukrainian beer author, translator, educator, avid traveller, and foodie, currently based in Zurich, Switzerland. AAB 036: Is Pasteurization Better For Beer Flavor?

Pasteurization is a method of stabilizing beer through heat.  Although some people think pasteurization can negatively affect the flavor of beer, when used properly, pasteurization stabilizes and preserves flavors and gives brewers flexibility in the brewing process. And with the rise in popularity of non-alcoholic beer, which has less inherent preservative qualities, pasteurization not only keeps flavors stable, but is necessary to keep those beers free from pathogens.This episode's guest: Keith Villa, Ph.D., is a trailblazer in the beer and cannabis industries; and brewmaster and co-founder of Colorado-based CERIA Brewing Company, dedicated to brewing only alcohol-free beers. AAB 032 - Diastaticus and Hop Creep

AAB 028 - For the Love of Pumpkin Beer

There’s no denying when “spooky season” comes around that pumpkin beers will be available. A popular autumnal seasonal, pumpkin beers are still a dominant force in “seasonality” in beer. AAB 026: Breweries, Trademarks, and the Law

A brewery’s trademark and its subsequent labels are its identity and protecting that involves many steps that involve beverage lawyers, government agencies, keeping tabs on other breweries and so much more. Today we speak to three guests with an eye on trademark protection, homage/parody vs. intellectual property theft and the legal ramifications of what happens when the judicial system has to get involved. This is a fascinating part of the beer world. Guests:Brian Kulbacki of Departed Soles Brewing. Brian is a 2012 Graduate of the American Brewers Guild Brewing School, where he took their Intensive Brewing Science & Engineering course for Breweries in Planning. Prior to that he graduated from Boston College with a double major in Marketing & Finance.  He has worked in marketing for the New England Patriots/Revolution and the Lakewood BlueClaws, as well as finance for Major League Baseball and Royal Caribbean Cruise Lines. He has also managed operations for a family business. Brian founded Departed Soles Brewing Company in 2014, which in 2015 opened its doors to become the first brewery in Jersey City, New Jersey since prohibition, and the first brewery on the east coast to craft gluten free beer in dedicated equipment, along with traditional glutenous beers. The brewery has won medals at GABF, the World Beer Cup, and Best of Craft Beer Awards, among others. The brewery is now run by Brian's dog, Bogan.Bill Covaleski of Victory Brewing Co. Bill has played a pivotal, creative role in leading the overall growth strategy of Victory Brewing Company. He serves as creative muse and guide for Victory beer brands and culinary collaborations as well as a driving force behind community engagement. AAB 025: The Fun and Science of Fruit Beers

In the early days of craft beer, fruit was added to beer to offer something to people who didn’t like beer.  These beers were typically made with syrups added to a beer and not a lot of thought went into them.  Today, breweries are embracing fruit and building beers around them.  The fruit is the focal point of the flavor and with increased scientific knowledge of how to work with fruit, brewers are pushing and pulling levers - microbes used to ferment the beer, when they add the fruit and how much and for how long - to bring forward all the right flavor chemicals.  Modern fruit beer is bursting with flavor.GuestsBret Kollmann Baker is a founder and the COO of Urban Artifact in Cincinnati, Ohio. AAB 024: Spontaneous Fermentation in Beer

Spontaneous fermentation may be the most unique brewing technique in the world and the beers they produce are just as interesting, with many flavors not seen outside these styles. But “spontaneous” doesn't really tell you anything about what goes into making lambic, gueuze and American made versions from insane boiling hours to months and years waiting to see if the beer is actually any good to sell. Today we talk to two producers: one a classic lambic house from the Senne River Valley and the brewery that defined American sour brewing.Werner Van Obberghen is one of the owners of Brouwerij 3 Fonteinen.In 2013, Armand Debelder and Michaël Blancquaert called upon Werner to help shaping the futureof 3 Fonteinen. With his experience in strategy and with masters in finance and business economics,he is now responsible with Michaël for managing 3 Fonteinen and its team of twenty. Michaël takescare of the creative & operational side (brewing, blending, bottling, labelling) while Werner managesthe business side (administration, sales, marketing, tasting room).Michaël and Werner continue the life-long craftmanship of Armand and – inspired by his values andwishes – took 3 Fonteinen a step further. Beer Travelers: San Diego

When you talk about America’s greatest beer cities, several names immediately enter the conversation. We always talk about Portland, Oregon, Asheville, North Carolina, Denver, Colorado, maybe even Chicago. But one name that always makes the list is our home for this episode, San Diego, California. Long an ambassador of great beer with breweries setting the style for the rest of the country and indeed the world, San Diego has a storied brewing history that I’m excited to explore today. I also can’t wait to talk with our two local experts today as it’s been about a decade since I last graced the sunny shores of southern California. To help us capture the essence of San Diego’s beer scene, we are joined by Jenny Mann and Brandon Hernandez. Beer writer and marketer Brandon Hernández has been deeply plugged into southern California beer for more than a decade. He has helped direct marketing at some of the area’s best known breweries, including Stone, Alesmith, and Societe. In 2019, the long-time writer decided to focus his efforts on creating a new interactive resource for fans of the area’s beer scene with the founding of San Diego Beer News.  The site is a bit of a throwback to the earlier days of beer blogs and local brewspapers. Instead of doing deep dives into broad, weighty topics of national import, Brandon focuses on providing detailed and tangible information about San Diego breweries and beer bars. SD Beer News offers brewery maps, tap lists, interviews with local brewers and beer players, and lots of local beer news.  A native San Diegan, Brandon is one of the most informed sources you’re going to find about that beer scene. When you research San Diego beer, Jenny Mann is one of those names that keeps coming up. For more than a decade she has worked for and with some of the top breweries and craft beer bars in the city. She has bartended, led brewery tours, taught draft beer maintenance programs, and helped breweries navigate the confusing world of social media. She is also a professional photographer who has captured many of the city’s breweries through her lens. Jenny is a brewery coach and well-regarded speaker who often presents to local brewery guilds. AAB 021 Wood and Barrel Aging

Portland, Maine is another of America’s most overlooked beer scenes. AAB 020: Pilsners Modern and Traditional

Pilsners have been enjoyed since their invention in Bohemia, now the Czech Republic, since their release in the fall of 1842. Since then, many iterations have been created and the pilsner has grown into one of the most beloved beer styles in the world. The beer continues to evolve and grow, with 21st century interpretations like the Italian pilsner to nods to the humble beginnings like using pitch lined wood barrels for aging. Pilsner is the Madonna of beer, constantly changing while always being authentically a star.Guests:Luc Lafontaine’s brewing career spans 30 years across multiple continents, anchored by a decade-long stint at Dieu du Ciel Brewery in Montreal before venturing on his own to open Ushi Tora Brewery in Tochigi (Toe chee gee), Japan back in 2014. This week on the show: we’re going to talk about beer and food pairing.  Our guest is the legendary Garrett Oliver who is the Brewmaster of the Brooklyn Brewery, but more importantly wrote probably the most popular book about beer and food pairing, the Brewmaster’s Table.About Garrett OliverGarrett Oliver is the brewmaster of The Brooklyn Brewery, the author of The Brewmaster’s Table, and the Editor-in-Chief of The Oxford Companion to Beer. He has been brewing craft beer since 1989 and is a veteran of over 1000 beer dinners and tastings in 16 countries. An original board member of Slow Food USA, he later went on to become a Councilor of Slow Food International. In 2014 Garrett was the recipient of the James Beard Award as the country's top drinks professional.  In 2020 he founded the Michael James Jackson Foundation for Brewing and Distilling (MJF), a 501(c)(3) grant-making non-profit organization that funds scholarships for technical education in the brewing and distilling fields for people of color. Beer Travelers: Milwaukee, Wisconsin. America's Most Overlooked Beer City?

Wisconsin is one of those places that lives in the imaginations of Americans largely in the form of caricature. Full of cheese curd eating, beer loving, Harley riders, the state rarely gets the respect it deserves. In reality, Wisconsin is all of those things and so much more. I grew up 90 minutes south of Milwaukee but it might as well have been a totally different country. Chicago is Midwestern in the way that non-alcoholic beer is beer, in name only.  Wisconsin, on the other hand, is pure Midwest. From Friday night fish frys to the homey environs of supper clubs and a relatively laid back sense of community and good spiritedness, Wisconsin is the heart of the Midwest for me.So today I’m excited that in the latest episode of Beer Travelers we’re making our way to one of the great overlooked gems in the American craft beer scene: Milwaukee, Wisconsin.To help lead us through this town’s glorious and storied beer scene we have two fantastic local guides. Chris Drosner is a long-time beer writer and editor covering Wisconsin and Milwaukee specifically. He’s written the Beer Baron column for the Wisconsin State Journal, the daily newspaper in the capital city of Madison. And it’s through this column that I first got to know Chris and his take on the Madtown and greater Wisconsin beer scenes.
